Meal prep done before 10am. This calls for some kind of a celebration! 😏 This weeks lunches are turkey meatloaf with zucchini and baked sweet potatoes. Snacks are egg muffins. Thanks for the suggestion of storing the egg muffins with a paper towel @lostgirlwellness 👌🏼👍🏼

Day 20. Another yummy meal, Bulgarian/French inspired 🇧🇬🇫🇷. I made what my household refers to as "magic pot" - because it always comes out tasting magical ✨😋 - in a Bulgarian guvech (ceramic making dish, but you could also use a Dutch oven). Divide your ingredients in two for two layers of the following: cubed Chuck roast (3.5 lb total), steak seasoning, mushrooms (1 package total), onions (as many as you can fit, I think I used 6 😂), a tablespoon or so of mayo (depends on the fattiness of the Chuck roast), repeat for a second layer. Leave the lid open at 420F for an hour or so or until the onions start burning on top. Then cover and bake at 385F for at least another 4 hours. I also add a cup of water but that's because of the altitude. I made cauliflower mash to go with it! Today I have applied for a food booth with @urbanspacenyc during summer of 2018.I have been developing this concept “Silly Chilly Dumpling Shop” for the last 5 months both vegan and non- vegan recipes to go with my Vegan hotsauce @sillychillyhotsauce. Everyone in this world knows about my obsession with Dumplings and after practicing and making over 3k Dumplings by hand I can say I am better at this now. Lol
I am actually very excited and little bit nervous (good nervousness) for this new venture and looking forward to see where this goes as I have the desire to Franchise This concept in the future. My aunt says anything I touch Turns into a gold mine so let’s see how far I go with this..
Please pray that I get into this spring market this year and kick this off to the next level to pair with the hotsauce I already make 🌶

Back to my clean diet... cast iron seared drumsticks finished in the oven and steamed broccoli with olive oil, salt, pepper, and nutritional yeast.
Anyone else never get hungry when they eat unclean? Enjoy all the delicious food but man i am TIRED. Haven't felt hungry all day... excited to detox a bit.

Tuesday and I’m not eating tacos? I know. I’m crazy. But I was craving some BBQ chicken. Thighs slathered and roasted at 375 for 40 mins. Served on top of roasted sweet potatoes (made at same time as chicken) and arugula tossed with @tessemaes ranch. 👌🏼 🍗 ••••••••••••••••••••••••••••••••••••••••••

1. In a small saucepan over low-medium heat, whisk together 1/2 cup of canned coconut milk, 2 cups coconut milk, 1 tbs coconut oil with 1/4 tsp cinnamon, 1/8 tsp black pepper, 1/2 tsp turmeric and 1/4 tsp cardamom until warm.

2. Once mixture has cooled, transfer to blender cup with 2 pitted medjool dates and a fresh cube of ginger.

3. Blend mixture until smooth (make sure your blender can handle warm liquids) and enjoy every delicious sip.
