🌱 Quinoa with black olives, wheat berries & tomato
🌱 Veggie straws (Kale, tomato & spinach)
🌱 Avocado
I’ve come to the conclusion that Luna does not like avocado. I’ll keep offering it but she’s had the same reaction for 2 months now! She had all of what she could get to her mouth with her first Quinoa wise. She LOVED the veggie straws - as do I. They’re bloody delicious.

almond granola 🥄 - it turned out so good, that I have to share the recipe with you

2 cups old-fashioned rolled oats
1/2 cup diced nuts - mainly almonds(I also used walnuts and Brazil nuts)
1 Tbsp Cacao nibs
2 Tbsp flax seeds
2 Tbsp diced pumpkin seeds
1/2 cup dried fruits (I used raisins and diced dried dates)
2 Tbsp melted coconut oil
5-6 Tbsp maple syrup
2 tsp almond butter ✨Preheat the oven to 150°C/300°F
✨Put the dry ingredients in a bowl and stir until combined ✨Add the oil and the maple syrup and stir until everything is lightly coated ✨Add the almond butter and stir again
✨Spread the mixture in a thin layer on a baking sheet lined with parchment paper ✨Bake it for 12 minutes ✨Let it cool down and put it in an air tight container ✨Mine lasts me for about a week or less 😅 but it stays good for about 2 weeks

I am thinking about creating a blog to share more recipes and longer posts but I am not sure.

🦋Lunch time! Ok, so now this is what I call a balanced plate!! Which is why I usually have lots of different textures, flavors and colors on my plate!
🥑Guacamole: .
• 1 ripe avocado .
• Cherry tomatoes (chop into tiny pieces)
• Cucumber .
• Chives .
• Garlic
• Red onion .
• Radicchio .
• Salt .
• Chili .
• Lime juice .
• Tiny bit of ground pumpkin seeds, ground flax seeds and ground chia (leftovers from this morning)
🌱Mashed beans .
• kidney beans .
• Garlic (tons of it Haha)
• Lime juice .
• Salt .
🍚rice with turmeric and sea salt (also lots of it 🤤)
🍠Sweet Potato Stew with coconut milk .
• 1 sweet potato, chopped up nicely in small cubes .
• 1 red onion .
• A small can of coconut milk
• 1 tsp green curry paste .
• 1 tsp Broth .

The three ingredients homemade coconut yogurt: Full cream coconut milk, lemon juice and a pinch of pysillum husk blitzed in a blender. Let it set in the fridge for 10 minutes and voila!

⏱️50 min 🔪🍰4 servings -----
1/2 cup water
1/4 cup teff flour
3 tablespoons tapioca flour
1/4 cup sunflower seed kernels
1/4 cup pepitas (roasted green pumpkin seeds)
1 tablespoon sesame seeds
1 tablespoon flax seeds
1 tablespoon teff
1 teaspoon black sesame seeds
1/4 teaspoon salt salt to taste
--- 🤗Ready to cook? --- --- ---
Preheat oven to 375 degrees F (190 degrees C). Grease a 9x12-inch baking sheet.
Stir water, teff flour, and tapioca flour together in a bowl until smooth; add sunflower seeds, pepitas, sesame seeds, flax seeds, teff, black sesame seeds, and 1/4 teaspoon salt and stir until mixture is soupy. Pour mixture onto the prepared baking sheet, tapping pan on the counter to evenly distribute mixture in the pan.
Bake in the preheated oven until crackers are crisp, about 40 minutes. Sprinkle salt over warm crackers.

Absolutely gorgeous veg chilli soup for early lunch. Lots of speed in here to get me back on plan.
Tin tomato & tin red kidney beans. Green & red pepper finely chopped with grated garlic. Beef stock cube and boiled water to cover. Add a hand full of rice. Cook for 22mins. Amazing and free ! Edited to say : season with salt , paprika and chilli powder to taste.
