Huge announcement! I'm officially down -20.6lbs since going vegan on June 14th. Yay!!! Tonight's menu: Asparagus, tiny little potatoes I decided to mash up and add lots of nutritional yeast and Earth Balance to, and finally some tomato and lentil couscous, with a fresh mushroom and kale/spinach sautéed salad on top.✨
Not-so-petit tucker from Petit Bocal 😍 (ordered mine with no potato and ignored the root veg to make it fairly keto friendly 👍🏻)
Sweet and sour blend of whole grains, lentils, peas, broccoli, shelled edamame, topped with Gardein's Porkless Bites.✨

Today I have eaten... not enough! I worked for 4 hours, did 50 minutes of Body Pump and 15 minutes on the dreaded Cross Trainer (high resistance random hills), and now my metabolism is on 🔥! Breakfast: Scrambled eggs - no cream or milk, just organic butter and peas, with smoked salmon. Hot water with lemon on side.
Second breakfast (because it's the weekend): apple dipped in @bulkpowders_uk peanut butter.
Snack: Not pictured, @nakdwholefoods cocoa orange bar.
Post-gym shake: @bulkpowders_uk pure whey protein, top secret flavour!
Dinner will be the rest of last nights @thebodycoach low carb Thai green curry! .

VEGGIE STUFFED SHELLS!!! I sautéed fresh garlic, spinach, habanero peppers 🌶 carrots 🥕 broccoli, and salt and pepper to taste. Then I mixed in ricotta cheese 🧀 and stuffed them in oversized shells. BAKE!! #yum #spinach #todayiate #pasta #garlic

I'm not dead! My life has been hectic in the best kind of way, but it's prevented me from cooking as much. So, tonight I had mushroom couscous topped with a sautéed kale, tomato, and mushroom fresh salad. Asparagus of course! And last but not least, Gardein's Fishless Fillets.✨
