This is definitely one of the most fantastic, classical #cantonese dish I have had in #hongkong recently. The noodles are to soak up the incredible tasting broth so that you could enjoy every single bit of it and finish the whole plate

CHINESE FRIED RICE WITH BROCCOLI. I'm a broccoli fan and Chinese food accepts all kinds of vegetables well. I often cook fried rice with broccoli. Because making fried rice is all about quick preparation at very hight heat, it's important to have all the ingredients ready and close by🥘🔥 1. Cook rice: Wash rice in cool water and soak in water for over 30 minutes. Drain the rice and add to a pot with measured water (120 ml water for 100g dry rice). Boil at first at high high, then at low heat until the water is soaked up conpletely. Turn the heat off. Wait for at least 10 minutes.

2. While cooking rice, prepare the other ingredients. First, make spring onion oi: Peel green parts of spring onion and fry these in vegetable oil. If the green parts become darker, take them out of the oil.

3. Cut off the end of broccoli and chop. Chop spring onions' white parts, ham and garlic.

4. Mix chicken soup stock, soy sauce, pepper and shaoxing wine.

5. Fry the broccoli, ham and garlic for a short time in vegetable oil.

6. Last but not least, heat a frying pan at maximum heat with a generous amount of the green onion oil (heat some chili in the oil before that, to taste). I think, 8 table spoons for one portion (with 100g of rice)). When the oil is hot enough (smoke), beat in an egg and stir quickly. Add the cooked rice right away and stir quickly, shaking the pan rhythmically.

7. After stirring for a few minutes, add the broccoli and the ham. Shake.

8. Add the mixed sauce and shake. Add a little sesame oil.

9. Once the liquid goes, serve with beer.
