Chia seed peanut butter chocolate chip cookies! 🍪😋 Happy Thursday! We are getting ready to head out on another play date today...but first...cookies! 👏🏼 These one-bowl cookies are so quick and easy to whip up...and they’re healthy! 👍🏻 No butter, gluten free, and vegan, these have become my favorite chocolate chip cookies! 🍪 👉🏼 Mix 3/4 cup of peanut butter, 1/2 cup coconut sugar, 1/4 cup of coconut flour, 1/4 cup of @bobsredmill gluten free flour, and 1/4 cup of @365bywholefoods rolled oats. Add one flax egg (1 tbsp of flaxseed soaked in 3 tbsp of water for about 5 min), 1/2 tsp cinnamon, 1 tsp vanilla, 1 tbsp @sunfood chia seeds, 1/4 tsp sea salt, and 1/2 cup of @enjoylifefoods dairy free dark chocolate chips. 😊Mix well until dough forms. Roll into balls and flatten on a parchment lined baking sheet. Bake at 350 for 12-15 minutes. Enjoy! 😘🤗🍪

✨First-what is intuitive eating? Simply put, it is listening to your body's natural hunger cues. This means no tracking of calories or macros and eating when you feel hungry. Seems simple, right? It can be tough!✨Why? Diet culture is everywhere we turn. It screams out, capturing our attention on billboards, magazines and social media. Intuitive eating says we must ignore these false ideals of health and what is good for you and go back to our roots. Think back to when you were a child. You most likely stopped eating when you were full and asked for food when you were hungry. You spoke up when your body was communicating with you.✨Intuitive eating does NOT mean eating crap food all the time, contrary to what some may criticize. In fact, some people still follow a dietary lifestyle while eating intuitively. ✨What has intuitive eating done for me? So much! Especially in my ED recovery. I contribute this lifestyle to why I've recovered as well as I have so far. When I first made the switch to recovery and tried to stop counting calories (I never counted macros ever), it was TOUGH. Partly because it was habit but also because over the 10 years of my ED I learned the calories in literally ever food/dish possible. So, I was still mentally calculating everything in my head more than I wanted (and can sometimes still find myself doing this--work in progress!). ✨BUT, now I've learned and know to listen to my body. Our bodies are WAY smarter than we think and will let us know when we need fuel, when we are full, and even when we want a treat 💁🏻 Intuitive eating has meant FREEDOM for me. It means going out for Starbucks and eating fries, but it also means fueling my body with lots of tasty whole healthy foods to keep my energy levels up! ✨If you're seriously thinking about making this switch, I highly encourage you to do so! I'm here as your coach to help you make the shift!

Onde há fumaça, há frango! 😶Quase nunca uso a air fryer. Muito menos pra carnes em geral. Eis que deixei o frango lá na varanda, na air fryer, mas tinha preparado como sempre (com azeite). “Nikí” eu olhei, tava a casa inteira com MUITA fumaça. Acho que minha casa nunca mais terá o mesmo cheiro 😥Conclusão: nunca deixe uma pessoa distraída cozinhar 😂 e que meu marido e meus vizinhos não leiam esse post 😬 .

Potajito con calabaza y patata

Primero se sofrie pimiento verde, pimiento rojo, y una zanahoria hasta q el pimiento se empiece a aponer blanco.
Se echa un trozo de puerro, cebolla y un ajo y a fuego lento durante 6 minutos. Se xha un tomate rallado y una cucharadita de pimenton dulce y se dejo unos 2 o 3 min mas.
Se echa una patata grande cortado a chasquidos, y un buen trozo de calabaza a cuadros grandes. Se salpimenta al gusto. Lo le echo ajo en polvo y perejil tambien.
Se.echan el bote de judias lavadas y se cubre con dos vasos de agua. Se prueba de sal y se cierra con la olla super rapida.
Yo la pongo 3 min y esta listo.

I am ashamed to admit I have been keeping a secret... I made this amazing dish a few weeks ago and forgot to post it. It is too good not to share! This is chicken 'gnocchi' - let me talk you through it. I had 4 chicken thighs that I needed to use. I was going to make chicken meatballs but then one went into a gnocchi shape and I just went with it! So it's simply chicken thighs blitzed in the processor with some dried herbs and salt, then rolled into a gnocchi shape and rolled in tapioca flour. I then pan fried it until golden. I served it with a yummy aubergine and red pepper sauce. The tapioca flour thickens the sauce in the most lovely way. Try it and tell me what you think. 🔸A handful of raw spinach (well washed)
🔸1-2 pitted dates (I put 2 and it was veryyy sweet!)
🔸1 medium 🍌
🔸3/4 cup cold water💧
🔸1 Tbsp 🥜butter
🔸a handful of ice cubes❄️ Disclaimer here: I used my high-speed blender, so the spinach was undetectable 😉

First blend dates & spinach with water. Then add the rest of the ingredients and serve immediately! LAST BUT NOT LEAST, let us know how you liked it! 😉
