Beetroot is an amazing veggie 🌸 good source of iron and folate (naturally occurring folic acid). It also contains nitrates, betaine, magnesium and other antioxidants! The nutrients in beetroots are heat sensitive, so with the rise in cooking time and temperature, the antioxidant content decreases 🌺Beetroot is rich in Vitamin C which is a water soluble vitamin that can be destroyed by cooking! it also loses more than 25 percent of its folate when cooked. So it is best to eat them raw 💗 beets are as happy in a soup (peeled and blended), juice, salad, dip or beet root hummus!
