Healthy Living London and @bobbythevegan headed to Redemption in Shoreditch tonight, a delicious vegan restaurant with beautifully presented and colorful food.

Thankfully, I was with friends that were happy to share as the menu is awesome and it was too hard to pick just one dish. I definitely recommend going with friends and eating tapas style!

Pumpkin Chickpea 🍛 I know this meal looks a bit strange but it's actually really good and really gets you in that fall mood. My Monday blues always gets turned around with my #meatlessmonday dinners 💚 made the quickest zucchini quinoa salad with roasted pine nuts! Simply sauté chopped zucchini and summer squash in olive oil and S+P for 4 minutes, add cooked quinoa to pan and heat for 1 more minute, and pour cooked veggies over a small bed of greens. drizzle a simple lemon and red chili flake dressing on top, and sprinkle a small handful of toasted pine nuts to top off dish! Quando bate aquela vontade de comer um lanche, é bom ter opções saudáveis à mão.
Esta barrinha é uma ótima pedida de lanche saudável, com destaque para a quinoa, grão com elevado valor nutricional e sem glúten.
Excelente fonte de proteínas, rica em zinco, ferro, cálcio, potássio, magnésio, manganês e vitaminas B2 e E.
Também é fonte de fibras, que moderam o apetite, e de ômega 3 e 6. Contribui para a redução de colesterol, fortalece o sistema imunológico e regula o funcionamento do intestino.

INGREDIENTES • 1 xícara (chá) de quinoa em grãos
• 1 e ½ xícara (chá) de farinha de aveia (se desejar, utilize farinha de aveia sem glúten)
• ¼ de xícara (chá) de semente de linhaça triturada
• 1 colher (chá) de canela em pó
• ¼ de colher (chá) de noz moscada em pó
• 1 pitada de sal marinho
• 1 xícara (chá) de maçã desidratada
• 1 colher (sopa) de óleo de coco
• 1 colher (sopa) de melado de cana
• 2 colheres (sopa) de açúcar mascavo
• 1 colher (chá) de essência de baunilha
• 1 colher (sopa) de água

MODO DE PREPARO

Em um processador de alimentos, misture a farinha de aveia, a linhaça, a canela, a noz moscada, o sal marinho e a maçã desidratada. Reserve. Em uma panela pequena, coloque o óleo de coco, o melaço e o açúcar mascavo mexa bem, em fogo baixo, até que fique uma mistura homogênea. Adicione a essência de baunilha e a água, e leve a mistura ao processador de alimentos junto com os demais ingredientes.

Processe até que uma consistência pegajosa seja formada.

Transfira para o tabuleiro e espalhe a massa. Deixe esfriar por cerca de 20 minutos e, em seguida, corte em barras. Envolva as barras em papel manteiga, coloque em um recipiente hermeticamente fechado e conserve em geladeira por até duas semanas. Se desejar, poderá ser congelado por até dois meses.
