Stir- fried greens with miso sauce and soba noodles!
Managed to cook up a quick and easy lunch before work yesterday and it tasted pretty good I thought I would share the recipe. I have added in pumpkin and sunflower seeds as my source of protein for the meal as that were what I had at the time, however, feel free to add in your favourite kind of protein sources to pair with the dish. You can also substitute the capsicum with some big red chilli for some extra kick of spice!
For 2 portions

Ingredients:
• 6 Brussels sprouts (thinly sliced)
• 2-3 heads of Bok Choy • 3 spears of asparagus (trimmed)
• ½ capsicum • 1 thumb size ginger (thinly diced)
• 1 tbsp of sesame oil
• ¼ cup of each pumpkin and sunflower seeds • 180g of soba noodles
Miso sauce:
• 1 tbsp of miso paste • ¼ cup of water • 3 tbsp of tamari
• 2 tbsp of sesame oil

1. Cut Bok Choy, asparagus, and capsicum into bite- size.
2. Boil a pot of water and cook the soba noodles according to package instructions. Drain and rinse with cold water.
3. Heat a separate pan over medium heat. Add in the sesame oil and ginger and stir fried for 30 seconds
4. Add Brussel sprout and stir-fry for about 2-3 minutes or till lightly brown.
5. Add the miso sauce into the Brussel sprout and stir-fry for another 30 seconds.
6. Add in bok choy, capsicum, asparagus, pumpkin and sunflower seeds and stir- fry for another minute.
7. Serve the soba noodle with the stir- fried greens and I also added some avocado and some sprinkles of white sesame seeds!
Make sure you grab some sauce from the stir fried as well because I find it taste juicier when I tossed the soba noodles, the greens and the sauce together!

Recipe for 2 muffins 🎟🎟
• 1/2 cup frozen blueberries • 1/2 cup unsweetened almond milk
• 1/2 tsp vanilla extract
• 1/2 cup Go-Chi Quinoa Flakes
• 1 tbsp ground flaxseed
• 3 packets natural sweetener
• 1/8 tsp salt
.
1. Stir together frozen blueberries, milk and vanilla in a bowl.
2. In a separate bowl, whisk together quinoa flakes, ground flaxseed, sweetener and salt. Dump dry ingredients into wet ingredients and stir together until fully incorporated.
3. Spray 2 ramekins with cooking spray and scoop in the batter. Microwave for 4 minutes or until the surface of the muffins spring back when tapped. Let cool and enjoy!

Miso Soup gives me such a warm, fuzzy feeling inside every time I eat or think about it! Here is our recipe for you all to try at home! Makes about 8 servings.
14 cups water
3 sticks dried kelp
2 cups bonito shavings
1 cup dried anchovies
2 pgs soft tofu, sliced in cubes
1/2 cup dry wakame seaweed
3 stalks scallions, chopped
1 can of corn or 4 1/2 ears of fresh corn, sliced
10 tbsp red miso paste & dash of salt or soy sauce for taste. Put the 1st 4 ingredients in pot. Let it boil for about 15 min with lid on, then take off the lid and let boil for another 7 minutes. Quickly rinse kelp and soak anchovies for 30 seconds, then add to the pot. Soak wakame for 3-5 minutes until softened. After 7 minutes is up add in red miso paste, wakame and corn. Let it boil again for another 7 minutes and then add tofu and a handful of scallion. Boil for 7 minutes and after, add in rest of the scallion. Serve immediately and enjoy! #quickandeasy #feelgoodsoup
