"Happy Friday, friends! Hope you've had a productive week like me. 😉 As I've mentioned before that I will be posting more pumpkin recipes because pumpkins are so versatile!
Today I'm serving up Thai fusion realness: Massaman Curry with a pumpkin twist. And get this- the curry paste is made from scratch! Excited? You should be! 😘
For curry paste:
• 10 g roasted garlic
• 20 g roasted shallots
• 10 g dried chili peppers- SOAKED for at least a few hours or overnight • 1 tbs tomato purée • 2 tsp ground coriander seeds
• 1 tsp cardamom • 1 tsp cumin
• 1/2 tsp cinnamon
• 3 tbs nutritional yeast
• 1/4 cup pumpkin purée
- blend all the ingredients together until smooth.
• 1 tbs avocado oil
• 400 g peeled potatoes, cut into chunks
• 250 g green jackfruit, boiled in water until softened before using in this recipe
• 150 g onion
• 1/2 cup roasted peanuts
• 2.5 tsp Himalayan salt* if you're using table salt- cut the amount down by half. • 2 tbs coconut sugar
1. Add oil into a pot and sauté with Massaman curry paste on low heat until fragrant.
2. Add coconut milk and stir until well combined, followed by potato chunks and boiled jackfruit, evenly coat the vegetables with the sauce.
3. Add water and bring to a boil, then leave to simmer on low heat for about 12-15 minutes, by that time potatoes should be softened and jackfruit pieces should be tender, if not- continue to simmer.
4. Add peanuts and onion, followed by salt and sugar. Then continue to cook for another 5 minutes. Season to taste.
5. Allow the curry to rest for about 5-10 minutes.
6. Serve with a side of steamed rice. garnish with fresh coriander (optional)
7. Indulge. 💖
