Dinner!
Organic:
Sliced Baby Bella mushrooms sautéed in butter and bacon fat with copped onion and garlic and seasoned with steak seasoning and dried rosemary then served atop a bed of quinoa and fresh spinach and garnished with cooked chopped bacon, chopped scallions and fresh cilantro.
Side of steamed baby asparagus.
Had fun with the pairing and delicious too! Yum! 😋

Nuestro Domingo Familiar empezó diferente pero muy gratificante y educativo. Gracias a todo el equipo y Doctores del Integrate Health Center of Miami por invitarme a esta Feria de la Salud con motivo de crear conciencia sobre todo de la Diabetes Gestacional. Por primera vez mi público eran puros @ligeritos hermosos a quienes invité a cocinar conmigo y enseñé a preparar esta rica receta, me divertí muchísimo, sus caritas llenas de alegría y emoción no las olvidare jamás. Pero lo que me llena más es poder colocar mi granito de arena para que cada vez más seamos más familias saludables 🙏🏼🙌🏻. Les dejo esta delicia para que prueben en familia y aún está el vídeo en vivo si quieren disfrutar de esta amena preparación.

CUPCAKES DE CHOCO-CALABAZA:

4 Huevos.
1/2 taza de endulzante a base de stevia.
1 cda de linaza molida dorada.
1 Cdta de vainilla.
1 cdta de polvo para hornear.
1 cda de harina de coco.
2 cdas de cacao en polvo.
1/4 taza de aceite de coco.
½ taza de calabaza horneada hecha puré tritura con el tenedor.
75 grs de Chocolate oscuro sin azúcar derretido
Trozos de chocolate para el centro si deseas.
Procedimiento:
Batir los huevos hasta que espumeen y se tornen un color amarillo pálido, añade el endulzante y el resto de los ingredientes, coloca la mezcla en moldes de cupcakes añade un trozo de chocolate en el centro, cocina en el horno de 10 a 15 minutos a 360F o hasta que al pinchar con un palito de madera esté salga limpio.
Podría ser una opción para celebrar el próximo Día de Acción de Gracias🤗😋. Todos los niños quedaron encantados así que eso es mucho decir. Lo más impresionante de esta receta es que no lleva casi nada de harina el ingrediente principal es la calabaza y el chocolate sin azúcar 🤤. Quien lo quiere probar 🙋🏼‍♀️. Ok guys... I didn’t cheat, but I ate more than I probably should have. I was picking at all the stuff I baked today... it was just too good! I couldn’t help myself😩 I had an omelette with veggies and cheese earlier today. I picked at candied nuts throughout the day. I made a chocolate cake which I had a slice of too. I made some Mexican beef stew, which I had a bowl of just a little while ago. I feel like I went a bit overboard with the sweets. I mean I didn’t go crazy, but not what I usually do. Anyway, point to all this is that for the next 3 days, I decided that I am going to do zero carb. My mom is going to do it too. I’ve actually never done zero carb. Does anyone have any tips or a sample menu lol. I’m going to look online, but if you guys have tried an easy menu, that would be great. Who’s tried zero carbs before? How did you do? Let me know because this is a first for me😬

Easy dinner! Soft scrambled eggs with salt and lots of coarse ground pepper. And a side salad (not pictured). The eggs tasted so fresh and delicious. Rarely do I eat them plain without sauce, but I've had lots of salt today and these tasted great as is.😋🍳🥚👌
Thanks to @naturallynourishedcollective I won a nice coffee mug to have my afternoon tea/coffee in! 😍
Of course I just had to make the paleo turmeric choc chip cookies that they featured for the competition recipe because they sounded so yummy - and they were delicious!👌🏼 I did reduce the amount of coconut oil to 2T, added extra cinnamon and didn't add the baking powder (got distracted and forgot) but they still turned out amazing and got the thumbs up from everyone 👍🏼👍🏼
