I've made this paleo coconut oatmeal a few times and I'm really liking it. Topped it off with blueberries and almonds this morning. It's quick to make and mostly coconut!!!!!!

Recipe:
INGREDIENTS
.
½ cup full-fat canned coconut milk PLUS ¼ cup water OR ¾ cup milk of choice. My recommended coconut milk isavailable here.3 Tbs. coconut flour, available here2 Tbs. finely shredded coconut, available here1 pastured egg OR ½ banana, mashed for egg free optionOatmeal toppings of your choice

INSTRUCTIONS
.

In a small saucepan, mix together the liquid, coconut flour and shredded coconut. Bring to a boil (mixture will be thick), cover, reduce heat to low, and simmer for 2-3 minutes. Stir halfway through.Off the heat, crack the egg into the saucepan and whisk quickly to prevent the egg from scrambling with the heat. Then, return to the heat and stir until thickened, about 2 minutes.If you wish, add in another 2 Tbs. milk to create a thinner consistency.For the egg free version Follow the instructions above but don't add the egg. Instead, whisk in the mashed banana and stir briefly.

Post gym & class noms 🥑

lately I’ve just been getting black coffee at Philz but my fav drink is 1/2 yerba mate, 1/2 chamomile, iced, creamy with almond milk and light sweet with honey. But lately been feelin kinda guilty to get it?? Ordered a small of my fav and the barista gave me a large today. Feelin kinda bad and i can’t help it

INGREDIENTS:
▪️5-plum tomatoes, cut into 1/2 inch thick slices (16 slices)
▪️2 tablespoons- brown rice flour
▪️2 tablespoons - butter or ghee butter / I use @omgheebutter
▪️4 cups-unsalted chicken stock
▪️3 cups- milk / divided
▪️3/4 teaspoons-Flavorgod Himalayan sea salt and pink peppercorns
▪️1 teaspoon -Dijon mustard
▪️18 ounces-elbows pasta/gluten free works
▪️6 ounces-sharp cheddar cheese, shredded (about 1 1/2 cups)
▪️3 ounces-fontina cheese, shredded (about 3/4 cup) OR mozzarella
▪️2.5 ounces-Parmesan cheese, grated and divided

DIRECTIONS:
☀️Remove top oven rack, and cover with foil; lightly coat with oil.
Preheat broiler to high
☀️Arrange tomato slices on prepared rack; lightly coat tomatoes with olive oil. Broil 8-10 minutes or until tomatoes are lightly browned. (Keep an eye on them)Remove tomatoes and set aside
☀️ in a small bowl , with a fork ,combine flour and butter in a bowl until a paste forms
☀️place a large high-sided sauté pan over medium-high heat. Add chicken stock, 2 cups of milk, #flavorgod Salt&P, and mustard. Stir with a whisk, add pasta to pan; bring to a boil. Cook for about 12 minutes or until pasta is done, stirring frequently. Stir in remaining 1 cup milk; cook 2 min. Add butter-flour paste, in pieces, stirring constantly to blend and thicken. Remove from heat; stir in cheddar,fontina,6 tablespoons Parmesan.
☀️arrange broiled tomato slices on top of pasta. Sprinkle with remaining 4 tablespoons Parmesan. Broil 2 min or until cheese begins to brown.

Spotty bananas...don’t throw them out! Freeze them or use them to bake with. I LOOOVE bananas!! 🍌 I have one everyday with almond butter, frozen in a smoothie, or mashed up in pancakes, cookies, or no-grain porridge. 😋

Did you know bananas are great for digestion 🙌🏻, energy, and increase happiness? They are also high in antioxidants which help protect our bodies from all the free radicals in our environment and chronic disease. I may or may not have more than one a day...What do you do with your spotty bananas?
