Buttery lemon & courgette gnocchi with spinach balls 😍
.
Gnocchi fried with shallots, garlic, vegan butter, lemon juice, grated courgette, salt, pepper, truffle oil, nooch and chilli flakes.
.
Spinach balls: wilted spinach (lightly blended) with 2 chia eggs (1tbsp chia seeds 3 tbsp water for each) breadcrumbs, garlic, chilli, nutmeg and looooads of nooch. Fried in olive oil.

This is my second time posting about this, but my heaven aka @rainbow_grocery could use the help of the #ZeroWasteCommunity in pressuring their #BulkBin suppliers to provide items to the co op in a more reusable way! Today I found out that the #BlackstrapMolasses container is returned directly to the supplier, but only one of their oil brands are (& it's not the one I get~ the cheapest #organic olive oil 😾hehe)! Was heading up to my mom's house tonight after shopping, but I'll have to make an extensive list of which bulk bin items are not sent to the store in reusable or at least non plastic packaging~~maybe the store can provide some of that info to us, being the loyal shoppers many of us are (@zerowastechef, @joyofzerowaste❤️) hehe 😽

Also~ thank you @arcadefire for choosing @bellacanvas as your merch supplier. Dinner // Once again cannot get past this one! It's just way too good and it's something I never get sick of! 👉🏼 Roast pumpkin, sweet potato, broccoli, mushrooms, carrots mixed w/Lentils, tofu, quinoa, gouda & @rozas.gourmet pesto w/kimchi & topped with nutritional yeast from @aboutlifenm + side of asparagus 🙌🏼 I find this meal perfect for recovery!

i got four meals for meal prep, plus dinner, out of this.

4 meals for prep:
. 11 garlic and #turmeric tortillas (+ 1/4 cup #nutritionalyeast in the mix. they arent easily folded into burritos because of the nooch, but they wrapped into taco shapes. 2 per serve. . tvp mince. i made it 1:1 with water in a pot, then added 1 bulb chopped garlic, water, and tomato paste. let it simmer to soften the garlic. 1/2 cup amounts.
dinner also included:
. the rest of my fresh spinach. not enough lmao. . mashed avocado with spices and lemon juice. 2 tbsp per taco . #chobani, the only non-vegan thing in the recipe. 2 tbsp per taco.

Kvällens magiskt goda maträtt
Fyllda zucchini halvor med stekt hackad lök, vitlök, purjolök, örter, naturel tofu (bästa tofu från #kungmarkatta ), zucchini kött (det man skrapat) , salt, peppar,gryllkrydda, vegan ost flingor, (#nutritionalyeast) riven vegan ost från #violife (när man delar zucchini skar man bort köttet så det ser ut som batar) Viktigt att förgrädda zucchini halvor när man har skrapat ut köttet. Förgrädda ca 20 minuter, men salta och olja först innan de forgraddas, Fyll halvorna och strö över med riven ost och grädda ca 20 minuter. Strömstad över med riven ost och grädda
Vansinigt gott med en god grön sallad . .

do you guys cook with nutritional yeast?

I'm a big fan! 🙋🏻 since I first started using it about 6 months ago, I've been pouring it into almost EVERYTHING.

here are some of my favorite wars to use it:

+ in pasta sauce 🍝
+ over potatoes before I bake them—same with zucchini & squash
+ over mushrooms when I sauté them 🔥
+ with quinoa + sprinkled over popcorn 🍿
if you're wondering, it really does taste like cheese—specifically, parmesan 🧀 even though it's vegan 🙌🏼

& it has lots of benefits, too:

+ first off, it’s a complete protein 💪🏼 it provides all nine amino acids our bodies can’t produce on its own, while also being vegan. WIN!

just 1 tablespoon of nutritional yeast (specifically @bragglivefoods) provides:
+ 4% of your daily recommended fiber (1g)
+ 4% of your daily recommended protein (2g)—complete protein ✨
+ a ton of B-complex vitamins, such as vitamin B12 (it provides 40% of your daily recommended value of it) < these are added to it

La levadura nutricional, nooch o Nutritional Yeast es un subproducto de hongos 🙌🏻 Es levadura pero "inactiva" esto quiere decir que no produce fermentación a diferencia de la levadura tradicional que usamos en panadería que sirve para hacer crecer las masas 🥐 Normalmente la consiguen en polvo o escamitas tipo hojuela (la textura es muy similar a las hojuelas de quinoa pero de un color más amarillento) _______________________________________________
Su sabor recuerda un poco a las nueces y al queso y por esto es usado en recetas de "quesos Veganos" Nutricionalmente es una buena fuente de vitaminas del grupo B y casi siempre la encuentran "fortificada" con vitamina B12 que es la polémica vitamina q le hace falta a la gente que sigue dietas basadas en Plantas 🌳 aporta un increíble cantidad de proteínas, fibra y hierro y queda increíble en casi todas las recetas 🍕

Hoy en colombia se consigue mucho más fácil que antes en tiendas y mercaditos saludables, otra opcion es comprarla por Amazon si tienen como traerla de USA 🐝

Por cada 100 gramos de levadura nutricional se obtienen aprox (dependiendo de la marca que compren) 46 gr de proteínas, 4 gr de grasas, 22 gr de fibra y vitamina B12

Cómo usarla?
🧀Yo personalmente la uso como remplazo del queso parmesano en recetas de pastas y lasañas, la uso para hacer quesos y salsas de queso Veganas, aveces se la agrego a crispetas calientes🍿 o como topping en ensaladitas 🥙
