Gleich vorweg: ich habe ihn noch (!) nicht selbst ausprobiert, aber zumindest recherchiert … und entweder ist das wie mit der Spinne in der Yucca Palme (denn ich habe den Tipp 100fach im Internet gefunden) oder es ist tatsächlich was dran 🙄

Stein des Anstoßes war auch hier der Newsletter von @rewe … dort gab es den Tipp „Rotwein im Mixer "atmen" lassen“

Klar, wissen wir alle, dass man Rotwein „atmen“ bzw. #dekantieren soll. Durch das Umfüllen in einen #Dekanter kommt der Wein mit Luft in Kontakt und kann dadurch sein Aroma besser entfalten. Soweit so gut.

Aber Rotwein mixen? 😳😱😳🤒

Erfunden hat diese Methode der Mathematiker & Physiker Nathan Myhrvold, Autor des Buches Modernist Cuisine, der das Kochen mal von seiner wissenschaftlichen Seite betrachtet.

Laut meiner Recherche erhält der Wein durch das Mixen eine Art Sauerstoffschock und wird binnen weniger Sekunden besser. Und gerade bei billigem Wein, soll diese Methode Wunder bewirken.
.
Funktionieren soll das wie folgt: einfach den Wein in den Mixer schütten und einige Sekunden warten bis der Wein aufschäumt. Man kann den Wein dann einschenken sobald die Bläschen zurückgehen. Für die Optik sollte man ihn dafür aber vorher besser in eine Karaffe umfüllen 😉

Ich habe mal auf einem Weinseminar gelernt, dass man den Korken nur ganz langsam und ohne „Pflop“ ziehen soll, damit sich der Wein nicht „erschrickt“. Denn durch den Pflop entsteht angeblich ein Unterdruck und dann kann der Wein erstmal keinen Duft entfalten.

Ganz ehrlich, dann müsste der Wein doch im Mixer einen „Herzinfarkt“ bekommen, wenn ihn schon ein „Pflop“ erschrickt 🤣

Nun interessiert mich aber brennend, ob ich die einzige Unwissende hier bin, die vorher noch nie was davon gehört hat 🙈

Wer hat denn schon davon gewusst bzw. das sogar schon ausprobiert? 🍷

Und wer von euch traut sich jetzt eine Flasche Rotwein in den Mixer zu schütten? 😂

Fascinating talk with Nathan Myhrvold who co-authored Modernist Bread with Francisco Migoya (@fjmigoya ). Among the many revelations: Kneading: unnecessary, whole wheat bread not healthier than white, gluten intolerance (except for celiac & few other conditions) total BS (my words not theirs). Claim that NYC water is responsible for our superb bagels--also not supported by evidence/testing. To more easily work w/ high hydration doughs use gelatin.
Francisco will be delivering a main stage presentation about some of the techniques in Modernist Bread at @StarChefs in 2 weeks. Highly recommend.

I really like what cryosearing does to the duck skin. I’m wondering if this possible with sous vide in between. The authors of this technique don’t recommend that. What do you think?🤔 .

Thanks to @gbcchca for the invite to a fascinating evening listening to Nathan Myhrvold talk about all things bread. He was in town to promote the upcoming #ModernistBread from @modcuisine - the follow-up to #ModernistCuisine. Who would have thought there were 2600+ pages of information all about bread? Well there are... and then some!
