Been awhile since I made these banana beauts! I used to make these Chocolate Chip Banana Protein Muffins weekly! But then I started the year with a Tone It Up detox and since then there have been several new yummy muffin recipes to try plus now I’m hooked on PB Banana Overnight Oats! But on this partly cloudy, cold day, it was time to bake up a batch of these delicious and nutritious, satisfies-chocolate-chip-cookies-cravings, muffins!

Recipe repost + revisions: Preheat oven to 400 degrees F. Spray a 12 cup muffin tin with cooking spray. Grab 2 medium mixing bowls; one for wet ingredients and one for dry ingredients. In one bowl mix together 3 mashed pretty ripe organic bananas, 1 large egg, 1/4 cup raw honey, 1/2 cup carton coconut milk, and 1/4 cup non-hydrogenated canola oil (or coconut oil). In the other bowl mix together 1 cup GF oat flour, 1/2 cup (2 scoops) TIU vanilla protein powder (sold at Target or on Amazon), 1/2 cup flaxseed meal (or almond meal if your digestive system is sensitive to flaxseed), 1 Tbsp baking powder, and 1/2 tsp sea salt. Combine well with wet ingredients. Stir in 1/4 cup or more of dark chocolate chips. Evenly pour into muffin cups. Bake for 15 min or until golden brown on top and toothpick in center comes out mostly clean. Eat and enjoy! Leftovers taste GREAT reheated in the oven on a baking sheet for about 5 minutes at 350 degrees F.

GF & Dairy-Free Blueberry Pecan Breakfast Muffins

-1/2 cup Gluten Free Flour (Bobs Red Mill)
-1/2 cup Oat Flour
-1 cup rolled Oats (GF)
-1/2 cup coconut sugar (or brown sugar)
-1 tsp baking powder
-1/2 tsp baking soda
-1/2 tsp Himalayan salt (or sea salt)
-1 cup unsweetened almond milk
-1/2 cup (4oz) unsweetened apple sauce
-1 tablespoon grass-fed butter
-2 large eggs (sub 1 egg 1 egg white)
-1 cup blueberries (raw)
-1/2 cup chopped toasted pecans
Optional:
-1 tsp vanilla
-1/4 tsp cinnamon

Directions;
Preheat oven to 400 degrees (375 if using convection setting) Combine dry ingredients in large bowl. Next, whisk wet ingredients in a separate bowl and mix until smooth. Pour wet ingredients into dry and fold with spatula until fully combined and no lumps remain. Make sure not to over mix! Carefully fold in blueberries. Scoop into muffin tins or desired pan and top with chopped pecans. Bake for 15-17 minutes, remove from oven and cool on wire rack! Enjoy 💕👍🏽

Comments; These don’t need to be gluten free, you can use whole grain flour or try all oat flour and see how it goes. If you use frozen blueberries the texture might change because of the water content so be careful of that as well! Feel free to swap out/in different fruits or nuts! ‭(PS I rounded the fat up because I missed the sprinkle of pecans in the recipe I believe...)

Думаю, пора поделиться рецептом банановых кексов. Как считаете?
1. 2 банана
2. 1 яйцо
3. 30 мл растительного масла без запаха (пробовала с кокосовым и оливковым, вкусно)
4. 50 мл молока (можно попробовать заменить водой, мне по душе молоко)
5. 125 г овсяной муки
6. 0,5 чл соды
7. 1 чл разрыхлителя
Специи по вкусу
Начинки в виде сухофруктов по желанию. С изюмом мне вкусно
Бананы размять вилкой, смешать с яйцом, молоком, маслом. Муку соединить с содой и разрыхлителем и просеять в жидкую смесь. Размешать до объединения, don’t overmix. Дальше по формочкам и в печь на 180 градусов, до готовности.

Back at it with some muffins. 🤷🏼‍♀️ I’m all about a convenient, grab and go snack that works for the whole family! You can really have some fun with this recipe. Add whatever toppings your heart desires!! 😉 I did 4 flavors. 1: blueberry bc life. 2: mixed berry - it was eh. 3: blackberry 4: banana and cinnamon. I used what I had at the house but I bet chocolate chips would be amazing. This recipe isn’t very sweet so if you like sugar, add more or add sweet toppings! 💕

Banana Apple Muffins

This is a favorite in our house. The kids love them and it’s a healthy snack I can enjoy in my meal plan. They taste just like a “not so healthy muffin” .
Ingredients:

2 ripe bananas mashed
2 large eggs, beaten
1 1/2 cups almond flour
3/4 tsp baking soda
Dash of himalayan salt
1/2 cup chopped apple
1 Tbsp organic grass fed butter
Directions:
.
Preheat oven 350 degrees
Spray muffin tin with coconut oil cooking spray
Combine eggs, banana, and butter into bowl and mix well
Combine almond flour, baking soda, and salt in a medium bowl, mix well.
Combine both bowls of ingredients together and mix until blended
Add chopped apple and mix
Divide batter evenly into muffin tins
Bake 15-18 minutes or until golden brown
Cool and Enjoy!

Blueberry spelt muffins
This muffin recipe is one of my all time favourite recipes to make and they are super simple to make and taste absolutely amazing! I kept the recipe pretty basic but the flavour combo is 💣. I’m always trying to keep sugar to a minimal is my baking and these are slightly sweetened with maple syrup and the rest of the sweetened comes from the blueberries which are packed with antioxidants and a super duper food that should be included in your diet. I hope you guys enjoy these! 😊. .

Ingredients:
* 1 cup almond milk
* 1 tbsp apple cider vinegar
* 1 1/2 cups spelt flour
* 1 cup oat flour
* 1 1/2 tsp baking powder
* 1/2 tsp baking soda
* 1 tsp cinnamon
* Pinch of salt
* 1/4 cup maple syrup
* 1/4 cup coconut oil
* 1/4 cup applesauce
* 2 tbsp mollasses
* 1 tsp vanilla extract
* 1 cup frozen blueberries

Directions:
1. Turn oven on to 350 and grease a muffin pan.
2. In a small bowl, mix the milk with the apple cider vinegar and set aside
3. In a large bowl, mix all the dry ingredients together. Make a well in the center.
4. Add the wet ingredients (including the milk) in the center of the dry and mix until just combined.
5. Fold in the blueberries and mix until everything is combined. Be careful not to overmix.
6. Place the batter in the muffin pan and cook for 25-28 minutes until the tops are slightly golden.
7. Let cool on a cooling rack for about 29 minutes and enjoy!
These keep well in the fridge for about a week.

"Toddler Hulk Muffins"

Ingredients:
• 1/2c Baby food purée of choice (or unsweetened applesauce)
• 4 Large eggs
• 2 tsp Vanilla
• 2c Fresh (uncooked) spinach
• 1 Ripe banana
• 1/4c Agave Nectar (or honey or pure maple syrup (not pancake syrup))
• 2tbs Coconut oil
• 1c Oat flour (almond meal or almond flour works too)
• 1/2c Coconut flour (or other gluten free flour) • 1/2tbs Chia seeds (or hemp seeds (You can omit this ingredient, but they add extra protein and omegas)
• 1tsp Baking powder
• 1/2tsp Salt
• 1/2tsp Baking soda

Instructions:
• Preheat oven to 350 degrees.
• Place the first seven ingredients (puree/applesauce, eggs, vanilla, spinach, banana, syrup, and coconut oil) into a blender and blend until smooth. You can also use a food processor.
• Pour liquidy spinach mixture from blender into a large mixing bowl.
• Slowly pour in remaining dry ingredients and mix with the wet ingredients until well-incorporated. (About two minutes on low speed if using a mixer. You can mix by hand.)
• Scoop the batter into silicone muffin molds, cupcake liners or greased muffins tin. Fill about 3/4 full.
• Bake about 15-17 minutes or until a toothpick comes out clean.

I personally used a mini muffin tin. I sprayed non-stick olive oil spray. They turned out perfect and came out of the pan with no mess.

Peanut Butter Protein Snack Muffins
Serves 6

Ingredients
* 1 C old fashioned rolled oats
* 1/2 C natural peanut butter
* 1 t baking soda
* 1 t baking powder
* 1/2 C unsweetened apple sauce
* 1/2 C plain Greek yogurt
* 1 1/2 - 2 t stevia or no calorie sweetener of choice * 2 scoops vanilla protein powder (mix and match your favorite flavors)
* 1/2 C egg whites (or 4 large egg whites)
* 1 t vanilla
* 1/4 t salt
* 1/4 C unsweetened almond milk

Instructions
1. Preheat oven to 350 degrees.
2. Add all ingredients to a blender and blend until smooth.
3. Spray 1 and a half muffin tins with non stick spray (18 muffin spots). Pour batter in each tin about 2/3 of the way to the top.
4. Bake for 12 minutes and let cool 5-10 minutes before you pull them out.
5. Store muffins in a sealed container in the fridge for up to a week or so.
Breakdown:
* Calories: 85, Fat: 4, Carbs: 6, Protein 7
* These are best warmed in the microwave. You can also top with some honey, jam, or Pb2, nut butter of choice to increase fats or carb content. #naughtyandnice #muffinmagic

Ich habe Dinkelmehl, Braunen Zucker, Rapsöl genommen, außerdem Kirschen und Mandelstifte. ❗️Tipp: Wenn man keine Zeit für Schokoladenglasur hat einfach Schokoladenstücke auf die heißen Muffin geben und mit dem Pinsel verstreichen 🤓

👩🏻‍🔬Mwaahahahaa we’ve been in the lab concocting these VEGAN MONSTER MUFFINS! We all {including and especially our littles) enjoyed them so much, we thought we’d share our recipe with you! •
Ingredients
1 1/4 c. unsweetened apple sauce
1/2 c. raw spinach leaves
1 ripe banana
1/4 c. almond meal
4 Tbsp. coconut palm sugar
3 Tbsp. coconut oil - butter flavour
1 c. unbleached flour
1/2 c. white whole wheat flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. shredded carrots
Cooking spray
candy eyeballs {optional} 👀
Instructions
Preheat oven to 350F
Blend apple sauce, spinach, banana, almond meal, coconut sugar, and coconut oil in a blender or food processor until very smooth.
In a separate bowl, mix flours, baking powder, baking soda & salt.
Stir in shredded carrots
Grease a muffin pan and bake for 15-17 minutes, until toothpick comes out clean.

Try these Green tea cranberry muffins out for #nationalmuffinday ! Strongly brewed green tea adds a subtle verdant flavor to these tender muffins, and adding baking soda directly to the tea cuts any bitterness that might occur from brewing it so strong. Using a food processor makes the thick batter incredibly easy to mix, but you can also make it by hand with a wooden spoon. Recipe link in profile!

This snowy day calls for a warm oven and homemade chocolate muffins made with @fourthandheart Chocti ghee. I’m obsessed with these dark chocolate banana ghee muffins. which I slather with peanut butter - so good! Find the recipe below:
Dark chocolate banana ghee muffins
Makes 12 muffins
Ingredients:
1 cup whole wheat pastry flour
¼ cup @fourthandheart Chocti chocolate ghee
4 ripe bananas
2 eggs
2 tsp vanilla extract
2 Tbsp unsweetened almond milk
1 tsp baking soda
½ tsp sea salt
½ cup dark chocolate chips, plus 2 Tablespoons
Directions:

Preheat oven to 350 degrees Fahrenheit and line 12 muffin tins with paper liners.
To a high-speed blender or food processor: add all ingredients, except for dark chocolate chips.
Blend on high until mixture is smooth and creamy. Add ½ cup dark chocolate chips and blend for a few seconds until chocolate chips are mixed in.

Scoop about two heaped tablespoons of muffin batter into lined muffin tins. Sprinkle with remaining two tablespoons of dark chocolate chips.
Bake muffins for 20-25 minutes, or until toothpick inserted into center comes out clean.
Remove muffins from oven and let cool in tin for five minutes. Carefully remove from muffin tin and enjoy! These muffins taste delicious warm with a drizzle of nut butter on top, too! #partner #FuelHappy
