What are your favourite vegetarian pizza toppings? • This is one of mine – finely sliced onions tossed in olive oil and salt, piled all over the dough as a base (instead of tomato sauce). • The onion melts into a soft, sweet, beautifully flavoured base to whatever else you added on top (cheese obvs).

OK so I didn't get a chance to snap a good photo of this one as I just had to eat it. My Vegetarian Burrito Bowl. This seems to be my Sunday meal at the moment. I don't have a recipe on the blog for this but the Veggie mix is just onion, mixed peppers, sweetcorn and chilli and it's served with Mexican rice, jalapeños, guacamole, sour cream and lots of hot salsa!😍

In Panama we call this "Almuerzo de obrero" or in other words Builder's lunch but without the meat that I have replaced with mushrooms. I also have brown rice, a fresh colorful salad with my beloved avocado and beans. What about you? What are you eating today? 🙆

There’s never any harm in adding more #sustainablysourced veggies to our plates, so how about letting some fish go and digging into our Earth for this treasured treat?! #DIY VEGAN POKE
INGREDIENTS:
Roasted beets, cubed.
Kelp Noodles rinsed and soaked.
Cucumbers, Carrots, Red Bell Peppers sliced and julienned as preferred.
Sliced #Avocado.
#Seaweed salad (like Kaiso salad).
Salad Greens or finely sliced raw cabbage as base or rice.
Rice or grains of your choice, if you want.
Green onions sliced for topping
Coconut Aminos
Salt and Pepper to taste
Sesame Seeds and sesame oil
Pickled Ginger
WHAT TO DO:
Roast your #beets for 45 minutes at 350 degrees until skin slides off when cooled.
Dice and soak in a Coconut Aminos or Tamari, if you are okay with soy.
Prep all listed veggies.
Put your base of rice, or kelp noodles, or greens down and artistically top with the rest!
Voila!... Your own vegan Poke bowl … it’s so yum!
Option:  if you like to prep your #kelpnoodles in advance, you can soak in a powerblended mixture of nut milk, coconut aminos, almond butter, ginger, and even tahini…  but it’s also a whole other dish you can gave at the ready for your go-to snack meals.
