Frittelle Abruzzese, Traditional Italian Christmas Eve Doughnuts

Ingredients 2 cups (10 oz) flour, all-purpose ¼ tsp salt 1 tbsp sugar ¾ tsp dried yeast (or 1 oz fresh yeast) 8 oz water, lukewarm temperature 1 tbsp orange or lemon juice 1 tsp orange or lemon peel rum soaked raisins (optional) oil for deep frying sugar for coating

Instructions Put the yeast in the water and set aside for 5 minutes. Place the flour, salt and sugar in a bowl; mix together and after the yeast is ready, pour the water and yeast mixture into the bowl along with the juice and peel, and mix by hand until a very sticky dough forms (if using rum-soaked raisins, add them at this time). Cover with plastic wrap and let rise until at least doubled. Place the oil into a deep pan (I used a wok) and heat to a medium high temperature. Test the oil by dropping a tiny piece of dough into it: if it doesn't begin to fry right away, the oil is too cold; if the dough browns too quickly, lower the heat as the oil is too hot. When the oil temperature is correct, take a piece of dough (it will be very sticky) and pull into a doughnut shape with a hole in the center. Drop into the hot oil and continue to make more. It is helpful to have another person frying the doughnuts while one person is shaping them, as it just too difficult to do both things at once, since the dough is so sticky. The frittelle will rise and cook quickly, so turn them as soon as they begin to brown on one side. Once they are cooked, remove them from the oil and place on paper-towel lined plate for a minute or two. Dip the frittelle into the sugar and cover completely. Place on a serving plate. Best eaten the same day.

Making roasted red peppers is a bit messy, but so simple, because the skins slip right off once they are charred. You can grill them on the barbecue in the summer, or under the broiler (grill) anytime. They can be used in potato salads, on pizza, or basically any way you like. I’ll show you how to make the traditional antipasto the way my family makes it, and then you can just eat it with some bread, or top little toasts to make red pepper crostini. The flavor is fabulous!
Italian Red Pepper Antipasto

2 or 3 roasted red peppers, peeled and deseeded
1 or 2 cloves fresh garlic, minced
2 or 3 tbsp good quality extra virgin olive oil
1/2 tsp or more sea salt or Kosher salt
one or two sprinkles of dried oregano (optional)

Tear the peppers into strips, and place in a bowl
Add the garlic, extra virgin olive oil, salt and oregano, if using and mix well.
.I’d recommend making this a few hours before you’d like to serve it so the flavors have time to develop. Use on an antipasto plate, as a side dish, on crostini, in a sandwich or however you choose, you won’t be disappointed.

Limoncello Tiramisù

This is a very simple dessert, so don’t let it fool you. I made it on a serving plate, but you can make it in a bowl, dish, or individual servings Limoncello Milk, at room temperature 1 large package Lady Finger biscuits 8 oz mascarpone (you can substitute cream cheese) at room temperature 8 oz whipping cream 1/4 cup (1 oz) confectioner’s sugar

Whip the cream until stiff peaks form, then add to the cream cheese or mascarpone, along with about 2 tablespoons of limoncello and the sugar. Fold together until evenly combined
.Mix limoncello and milk at a ratio to your liking (mine was about 1/3 limoncello 2/3 milk) and place in a bowl. Don’t make too much as you’ll keep refilling the bowl as you go.

Dip lady fingers into the liquid fairly quickly (the warm milk helps absorb into the biscuit more easily.)
Place onto a serving plate or bowl, about the size you want to make the dessert
.Place some of the cream mixture onto the biscuits and spread over, evenly.
Repeat, making two more layers with more biscuits and cream, but place them in the opposite direction of the last layer, cutting them if necessary; however, do not put a broken end to the outside of the dessert, it won’t look nice.

If you run out of liquid, mix more limoncello and warm milk.
Finish with a layer of cream mixture, and make a nice swirly pattern on the top.
Refrigerate for at least 8 hours to let the fingers get completely soft, I usually make this the day before it’s needed.
