12 Days of Fitmas!!
A cookbook for a gift idea? Definitely! The new year always brings fresh and new goals we set for ourselves. One of them is setting a better nutritional mindset and promising to eat better, perhaps start a diet. I am not a diet person. Truth be told, I’ve never been on a diet before! What I have learned to become, is to just be a more conscious eater! Listening to how my body responds to foods. I’m STILL learning! So let me share this cookbook with you. This book is chock full of delicious, colorful, healthy vegetarian meals that are totally doable to make! She also gives alternatives to make these recipes vegan. Now, I consider myself a “Confusitarian”. 🤔 ha ha! I’ve grown to really enjoy vegan foods. However, you may find me adding some lean proteins (chicken, salmon or beef) to these meals. I do crave that.
Some of my favorite dishes I’ve made from this cookbook: Colorful Weeknight Burrito Bowl, Hearty Lentil Minestrone, Roasted Cherry Tomato and Brown Rice Risotto. So yummy!The photos are inviting and recipes are very easy to follow. What would make this book even better is to make the photos scratch-n-sniff!! 👃🏻Thank you @maneki_moe for introducing this book and for having such a creative culinary friend! 🌱 Plant Protein Power 💪

Let's talk protein a moment. This is an interesting topic to me because there are so many variations of "eat this and don't eat that" out there. I am a firm believer in eating the way that makes you feel the best. For me a diet that includes protein from nuts 🥜and seeds and legumes. That is what my body seems to respond well to and I feel better overall.
They are plant sources of protein, fiber and fat.
They improve cholesterol and arterial function without causing weight gain. The unsaturated fatty acids they contain or "healthy fats" will keep you fuller longer because of their high fiber content. As well as satiated because fat is a flavor carrier.
Plant 🌱sources of fat are NOT like the artery clogging animal fat. Not even close. It will not hurt to include plant 🌱based protein and fats in your diet. Now...that's not to say that is what you should do or shouldn't do. Or you should eat this way or stop eating protein and fats from animal sources. What works for one person and their body is not necessarily going to work for another. 🤓 Listen to your body and I promise you, it will tell you what it needs.

✌🏻❤️🍪 Inspired by the @bonappetitmag #foodcast ft. @doriegreenspan and the weekly baking madness of @cbcbakingshow I decided to make these “World Peace” cookies 🌎✌🏻. They are SUPER chocolatey and made the house smell amazing 🍫. I think I worked the butter too much, which is why they are on the thin side 🤔...guess this means I’ll just have to make them again soon 🙃!
