🥑Vegan Cali Poke Bowl🥑
Super fun to create and even more fun to eat! 😋 .
🥑Ingredients:
•1/4 block of firm tofu
•1-2 roma tomatoes
•1/2 jalapeño
•Handful of cilantro .
•2 green onions
•1-2 avocados .
•Lime
•Sesame seeds to taste .
•Finely chopped garlic, to taste
•Splash of avocado oil .
•Rice of choice (I used purple sticky rice!)
•Coconut aminos .
•Beet juice (optional, for aesthetic purposes)
•Seaweed, if you want (I ran out 😩) .
🥑Instructions:
This is for just 2-3 bowls so most of this is to taste! I have odd amounts of some of it since I winged this. But more or less it's .
•Get yo rice cooking! While that's doing its thing, take your finely chopped garlic and sauté it over medium heat in the avocado oil until it gets crispy. Stir frequently so it doesn't burn! Put it on a paper towel to cool and so the oil won't make it soggy
•Cube the tofu and let it sit in the beet juice, if you want a pink tint to it to mimic traditional poke fish. Add a few splashes of coconut aminos at this point. •Finely chop the jalapeño and cilantro, and rough cut the avocado, tomato, and green onions. Set aside the onion and avocado, and mix the jalapeño, cilantro, and tomato with the juice of one lime (I hand squeezed my lime so it's not a precise amount)
•Once the rice is done, put it in the bottom of your bowl and add the tomato mixture to it in a thin layer. Add tofu, avocado, and green onions. Repeat in layers until it looks good to you!
•Sprinkle sesame seeds, crunchy garlic, and seaweed to taste. Drizzle some more coconut aminos on top and you're done!

ok i am posting this way later than i ate it but tonight i made two kinds of flatbread pizzas!! top one is supreme with hummus for sauce and the bottom one is spinach artichoke :))) and salad but mostly just pizza 🍕

Raw Caramel Slice Recipe⠀ ⠀
Ingredients⠀
For the Base:⠀

1 cup dates⠀
½ cup almonds⠀
1 tsp coconut oil⠀

For the Caramel:⠀

1 cup dates⠀
½ cup coconut oil⠀
1 ½ tbsp unhulled tahini⠀
¼ cup pure maple syrup⠀
1 cup soaked cashews⠀
⅓ cup water⠀

For the Top Layer:⠀

¼ cup coconut oil⠀
¼ cup pure maple syrup⠀
¼ cup raw cacao powder⠀


Instructions⠀
For the Base:⠀

Pulse all base ingredients in a food processor or blender until it is crumbled and sticks together easily when pressed.⠀
Pour into the bottom of a tin lined with parchment paper and press down until firm. Put in the freezer.⠀

For the Caramel:⠀

Pulse all caramel ingredients together in a food processor or blender until smooth. Use more water if necessary.⠀
Pour on top of the base and return to the freezer.⠀

For the Top Layer⠀

Combine all top layer ingredients into a small saucepan and turn heat to low. Stir continuously until combined (should look like chocolate sauce).⠀
After the caramel layer is firm, pour this chocolate sauce on top and put back into the freezer.⠀
After one hour, remove from the tin, slice it up and serve or store in an airtight container and refrigerate.

Good evening everyone! This was my "plate" from earlier today! My dinner was a new falafel recipe which will be on my blog tomorrow. Power greens mixed topped with shredded beets, carrots, cucumber, sugar snap peas, tomato, sauerkraut, eggplant hummus, kidney beans, and fire roasted bell pepper. Have a great night!

Chocolate for breakfast? Yesss 🤤

Chocolate pudding smoothie bowl: - 1/2 avocado
- 2 frozen bananas
- 2 Tbsp cacao powder
- 1/2 cup water ( i used plant milk- unsweeetened soy milk)
Anddd blend 😄
I doubled the ingredients for 2 servings, love it ❤️
Topped with some banana, hemp seeds, macadamia nuts, shredded coconut and for some extra chocolatness i made a sauce ( 1Tbsp cacao powder, 1Tbsp maple syrup, 1Tbsp cashew butter) 😍

Leftover Meatloaf makes for great Sandwiches 🥪
The Meatloaf we made with @beyondmeat Beyond Burgers last night was so yummy we decided to make sandwiches for lunch!

I’ll post the recipe for the Meatloaf below 👇🏻 This is what’s in the Meatloaf Sandwich :

Homemade Crusty Bread
Horseradish Mayo made with @followyourheart Vegenaise
Romaine Lettuce
Dijon Mustard
BEYOND MEATLOAF
2 Pkgs of @beyondmeat Beyond Burgers
1/3 cup plus 1 Tbsp of Plantbased Milk
1 @followyourheart Vegan Egg(prepared)
1 Tbsp @edwardandsons Worcestershire Sauce
2 Tbsp of Ketchup **** Secret Ingredient 1/2 cup @sabrett Onions in Sauce (you can use chopped onion instead)
1 cup Regular Bread Crumbs
Tsp of Parsley fresh or dry
3/4 tsp of Salt
2/3 tsp of Garlic Powder
2/3 tsp of Onion Powder
Black Pepper to taste

GLAZE FOR TOP:

2 Tbsp of @sabrett Onions in Sauce
2 Tbsp of Ketchup
1 Tbsp of Worcestershire
1 tsp Yellow Mustard
1 Tsp Maple Syrup
DIRECTIONS: •Combine all of the ingredients for the meatloaf and mix until well incorporated. •Place the loaf in a small loaf pan that has been lined with parchment paper, leaving the sides long enough to fold outside the pan for easy removal. •Mix together the glaze ingredients and pour on top of loaf. •Bake at 375 for 40 minutes then lower to 350 cover with foil and bake another 20-25 minutes.

The sides and top may darken but are just caramelized and delicious!! .
