Con questa fase della lavorazione, “cuocendo” (non è il termine esatto), in enormi Wok (nel caso di una lavorazione manuale) o in enormi #lavatrici (lavorazione più controllata e moderna) le foglie fresche, si arresta il processo enzimatico delle stesse, processo enzimatico iniziato al momento del “Picking”, della raccolta….in poche parole, si cerca di “uccidere la vita della foglia”, per preservarne aromi, qualità, benefici.
Nella lavorazione non manuale, le foglie vengono messe in queste macchine per circa 4/6 minuti ad una temperatura di circa 220/230 gradi.
