BLAT 💥 Bacon, Lettuce, Avocado and Tomatoes ! Yum yum yum! Slathered some mayo on the lavash and I dressed the the romaine hearts and cucumber in ranch dressing. Each bite was crunchy, fatty and delish !! If you’re curious- there’s a pic of the lavash wraps in my story. Even if you’re not Keto; these are such an easy substitute for traditional pitas, wraps and tortillas. Also this a good example of how your thinking on Keto has to change - my instinct from years anti-fat sentiment would be to make a salad wrap with drab grilled chicken, light dressing, no bacon, no avocado. Certainly a more low calorie option but those sad low fat wraps are not only a bummer to eat but not satiating!

Cheesy Vegan Potato Soup Recipe by @organicauthority

Ingredients⠀

2 tablespoons olive oil⠀
4 cups Yukon gold potatoes, peeled and chopped⠀
1 yellow onion, chopped⠀
3 garlic cloves, minced⠀
4 cups low sodium vegetable broth⠀
1 bay leaf⠀
2 teaspoons sea salt⠀
⅔ cup unsweetened almond milk⠀
3 tablespoons nutritional yeast⠀
1 teaspoon ground black pepper⠀
¼ teaspoon paprika, optional⠀
2 tablespoons minced chives for garnish⠀

Instructions⠀
Heat oil over medium heat in a large pot. Add the onion and saute for four to five minutes, until onion is softened and translucent. Reduce heat slightly and add garlic. Saute for another minute.⠀

Add potatoes, vegetable broth, bay leaf, and sea salt. ⠀

Bring to a boil and then reduce to medium heat. Simmer covered for 20 minutes or until potatoes are fork tender. Let cool for ten minutes.⠀

Transfer soup to a high-speed blender, in batches, if necessary. Add almond milk, nutritional yeast, pepper, and paprika. Blend until completely smooth. Taste and add more nutritional yeast and/or salt and pepper if necessary.⠀

Return soup to the pot and heat over low heat until warm. Ladle soup into bowls and garnish with chives.⠀
