I made this fabulous Ikarian Stew from the @bluezones recipes and it is fabulous!
If you have never heard of the Blue Zones, they are 7 areas of the world where there are more centenarians than anywhere else in the world. All 7 areas consume mostly a plant based diet and this is a soup indicative to Ikaria, Greece.
I doubled the recipe and have been eating this for weeks. I added some of my own ingredients to this soup to make it even better. It is full of heart healthy plant based veggies and legumes, tomatoes, and spices. It even has a fennel bulb which I hardly cook with. I hope you love it too!
Ikarian Stew with Black Eyed Peas:
1 large onion diced
5 garlic cloves crushed
2 cups Crimini mushrooms diced
1 fennel bulb chopped
2 cups potatoes cubed
2 cups squash cubed
1 cup black eyed peas
1 large firm ripe tomato finely chopped
1 16 oz can tomato sauce
2 Bay leaves
Salt and pepper to taste
1 bunch dill, finely chopped
1. Bring the black eyed peas to a boil in pot with some water, boil for one minute, remove from heat, cover, and let sit for an hour. Drain, rinse, and use.
2. Cook the onion, mushrooms, garlic, and fennel over medium heat covered with some water, salt, and pepper until soft (about 12 minutes). Add the black eyed peas, squash, and potatoes.
2. Add the tomato, tomato sauce, and enough water to cover the beans by about an inch. Add the Bay leaves. Bring to a boil, reduce heat and simmer until the black eyed peas are about half way cooked (check after 40 minutes, but it may take over an hour). 3. Add the chopped dill and season with salt.
4. Continue cooking until the black eyed peas are tender. Serve with chopped scallions or cilantro.
