Sunday Morning Turmeric Spiced Pancakes with Balsamic Berry Compote 💜💛❤️
~~~~~~~~~~~~~~~~~
Pancakes
•2 cups mashed bananas
•4 eggs
•2 cups coconut flour
•1 cup rice flour
•1/2 cups sorghum flower
•1 tbsp. turmeric
•1 tbsp. cinnamon
•1/2 raw cane sugar

Blended into batter and poured into pancakes over sizzling coconut oil and butter.
Compote
•1 cup frozen berry mix
•1/2 cup fresh blueberries
•1 diced apple
•1 tsp. nutmeg •1 tbsp. balsamic vinegar
•1 tbsp. butter

Bring to a boil, reduce and let simmer for 20-30 min.
Butter that cake, drizzle with maple syrup and enjoy 🥞🍓🍯💃🏼

Red Cabbage & Bean Soup
A hearty soup with antiviral & antibacterial properties, vitamin C, calcium & magnesium and iron & zinc to help soothe a cold or just as a nice winter warm-up 🤗❄️ Sauté some minced garlic and onions in 2 tsp olive oil w/ 1/2 tsp black sesame seeds, 1/4 tsp Himalayan sea salt, 1/8 tsp cumin, 1/8 tsp ginger & 1/8 tsp cayenne.
Add 2 cups veggie broth & bring to a boil. Toss in 1.5-2 cups mix of green beans & red cabbage. Simmer 5 minutes; add in 1/2 - 3/4 cup al dente rice pasta, 3/4 cup adzuki beans & 1/3 cup grape tomatoes. Simmer 5 more minutes and you're done 👍

F R I T T A T A 🍳. Or is it a crustless quiche? I'm never quite sure 😳. Whatever this is, it was a great way to use up some of our veggies on the weekend, and turn them into a delicious meal for our breakfasts + lunches this week. I roasted a large sweet potato, 3 small beetroots and an onion in some olive oil and spices. And once they cooled, I spread them in out in a greased quiche dish, added a little cooked bacon (you can omit for a veg option), and poured in my egg mix (8 free range eggs, salt, pepper, chopped fresh parsley and a dash of milk all whisked together). I topped it all with a handful of cheese and baked it at 180 degrees until cooked (I think it was 15-20mins from memory). Serve by itself for a light breakfast, or with a delicious salad for a more filling lunch! What I love about it is, you can tweak it to whatever you have on hand. Add more greens if you have it, change the cheddar for ricotta or goats cheese for something extra delicious, or swap roasted veggies for fresh veggies instead. Options are endless! Earlier today I was reflecting upon how good I’ve felt the past couple of weeks. Being in tune with your body is such a powerful tool. Adrenal fatigue hit me HARD but one of the most amazing gifts that came from it was my ability to be so in tune with my body. I’m feeling better every single day. The bloating issue I’ve been having seems to have disappeared. My acne isn’t raging. I feel good today - in large part due to an awesome hot yin yoga class🙏🏻.

I know right! It is so hard to walk down the aisle with so many options yet not knowing what to buy. The most simple but delicious lemon blueberry muffins 🍋
Sometimes you just need a quick + healthy treat or grab and go breakfast and these hit the spot
Recipe:
1.5 cups quinoa flour
2 tsp baking powder
1/4 tsp cinnamon
1/2 cup coconut sugar
Pinch of sea salt
Zest + juice of 1 lemon
1/4 cup coconut oil, melted
1 large egg
1/3 cup unsweetened coconut milk
1 tsp vanilla extract
1 cup blueberries
Preheat oven to 400 degrees and grease a muffin tin with coconut oil. In a large bowl, whisk together the quinoa flour, salt, baking powder, cinnamon, lemon zest and coconut sugar. In a separate bowl, combine the melted coconut oil, coconut milk, egg, vanilla and lemon juice. Combine the wet into the flour mixture and stir until just combined. Add in the blueberries and gently stir. Separate batter into 12 muffins and bake for 20 minutes or until a toothpick comes out clean.

Fats, such as avocado are so important for optimal health. The right types of fats help to reduce inflammation in the body, support hormone levels, manage blood sugar levels, help to reduce LDL (bad cholesterol) levels in the body, reduce the risk of heart disease😊.

It makes me sad that much attention has been focused on the need to reduce dietary fat. About 1/3 of your diet should come from fat. Of these fats, about 1/3 should be saturated (animal fat, coconut oil), 1/3 polyunsaturated (plant oils, fish oils seed oils), and 1/3 monounsaturated (avocado, olive oil). Polyunsaturated and monounsaturated are the most health supportive 💛. Some of my FAVOURITE fat sources include: chia seeds, hemp seeds, coconut anything (lol), cacao, and avocado!!! 😛. What fats do you love!? 👇🏼
