Good morning lovelies! It might be miserable outside but inside, tropical oats are bringing sunshine memories 🌞🥥🍍🍓🍌 Today’s oats were cooked with toasted coconut and chopped mango, more on top with some pan fried pineapple, tiny banana and strawberry 👌🏽 ooh and a little dried mango and some banana chips. .

Forget the coffee...Smoothie bowls have become my 'must-have' morning ritual. Thanks to aronia berry and grape seed powder this creation turned out to be quite the purple diva. Topper her off with kakao nibs, dried goji berries, coconut flakes, and BERRIES :) PLUS you'd never know it but there's also a tablespoon of spirulina, maca powder, and plant protein all mixed in as well. So this is basically a bowl of super power! And we bought all the ingredients at our local natural food store. 🤗
I'm always looking for new delish smoothie ingredients. Any suggestions?? *

Homemade Energy Bars:😍 So what does it take to make the ultimate homemade energy bar? They need to be packed with protein and contain tons of nutrition, but most of all…they should be delicious! This recipe makes 10 bars:
——Ingredients——
1 cup oats
1/2 cup pumpkin seeds
1 cup almonds
1/2 cup buckwheat groats
1/2 cup raisins
1/2 cup dried cranberries
1 cup dried apricots
1/4 cup maple syrup
1/4 cup water
——Method——
1. Preheat oven to 180°C.
2. Line a large baking tray with greaseproof paper. Spread out the oats, pumpkin seeds and almonds evenly on the tray, then roast for 10 minutes in the preheated oven.
3. Meanwhile, blend the apricots, maple syrup and water together until smooth, then transfer to a mixing bowl. Next, add the buckwheat groats, raisins and cranberries to the mixing bowl.
4. Remove the baking tray from the oven and leave to cool, but make sure the oven remains switched on. Once cool, transfer the roasted oats, pumpkin seeds, and almonds to the large mixing bowl.
5. Line an 8” x 8” square cake tin with greaseproof paper before transferring the mixture into the tin. Smooth over the top using a piece of greaseproof paper, pushing down to make sure the mixture is compact. It's important you press down as firmly as possible to ensure the mixture is compact, which will prevent the mixture falling apart when you slice them into bars.
6. Place the cake tin in the oven for 20 minutes.
7. Remove the cake tin from the oven and leave the energy bars to cool completely.
8. Take the energy mix out of the cake tin and slice into 10 energy bars. .

Grab and Go Protein Porridge...
Perfect way to start the new week.

Make a batch of soaked muesli/porridge that serves 4 with roughly:
1.5 cups quinoa or oat flakes
3 tablespoons chia seeds
1 large mashed banana
1 handful chopped figs or prunes
3 teaspoons cinnamon
2 serves protein powder
Enough milk of choice to cover and still be a little “liquidy” once stirred (the chia seeds will soak the liquid up). Cover and refrigerate for at least 2 hours or overnight.
Once you’ve enjoyed your breakfast, add the following to the remaining mix:
2 whisked eggs
1/4 cup milk
2 teaspoons cinnamon
Pour into a baking dish, sprinkle with extra oats/quinoa and cinnamon, and bake at 180 degrees until set (approx 20 mins). Serve warm with yoghurt and fruit OR pack and take on the road with you!

Breakfast this morning was amazing ✨ it was a #rainbowbowl; sweet, creamy, and satisfying. What are you seeing? A green pancake (inspired by @gkstories recipe from their blog), banana-oat-chia-porridge (the recipe of which I posted a while back), açaí smoothie (with frozen banana, spinach, açaí, almond butter, rice milk, ginger, berries), and coconut yoghurt. That’s it & nothing else is needed. My whole family was drooling over this concoction! 🌸🍉🤤
