Vreme je za uzinu 🕐🤗
Malo sam "mozgala" sta napraviti od preostalih namirnica u kuci i napravila ove super muffine sa borovnicama 👌☺ Nisam ih ljubomorno sakrivala jel ne mogu sve pojesti ☺ pa je jedan za mene i moju najlepsu uzinu 😊, a ostali za ukucane.
Svi se slazu da su odlicni! 🤗

Da schreibe ich heute morgen noch das Backen ist erstmal vorbei - SCHWUPPDIWUPP fällt mir da nicht aus @call.me.the.pauli #paulisadventsgedöns Kokosmehl in die Hände 😂👍🏼 .
Da ich ja heute morgen schon so früh wach war und nicht beim Sport war habe ich nochmal Backpulver&Co zusammen gesucht 😂🙈 [gut das die Kartons beschriftet sind] und mein neues Muffin-Rezept angerührt 👩🏼‍🍳 .
Jetzt wird wieder ordentlich gekrümelt 😂💙😂

Für die Low Carb Kokosmuffins benötigt ihr: .
🔹200g Zucchini 🔹30-40g Kokosmehl*
🔹20g Whey [Snickerdoodle] 🔹1 Ei 🔹40g Xucker 🔹Butterkeks Flavedrops (@nutriful)
🔹5g Backpulver .

👩🏼‍🍳Die Zucchini klein raspeln und anschließend alle Zutaten hinzugeben und bei 180* für 20-25 min in den Ofen damit 😍💙

👩🏼‍🍳☝🏼Ich habe bei dem Kokosmehl von #paulisadventsgedöns noch Wasser hinzufügen müssen, damit der Teig nicht so zäh ist. Müsst ihr mal schauen 😉

Während mein Kiddies nun schlafen genieße ich meine Muffins bei ein wenig Schreibkram 📝😅 Ahhh und die Lebkuchenhäuser sehen toll aus 😍👍🏼 .

I had some 🥕🍎 and 🍌 that were going to go bad. So instead of throwing them away I made muffins!!! 5 batches!!!These muffins are not only healthy but a great prepared snack for on the go. Plus they freeze well so I’ll be stocked up and prepared!

👩‍🍳 👨‍🍳 I developed this recipe for my preschool classes because I wanted to bake something with all the festive spices associated with the holidays but, of course, I try to always include a veggie too! The sweet potato makes these muffins extra sweet and super moist. We made them in a class yesterday and they got 👍👍from 10/12 kids. I cooked and mashed the sweet potato ahead of time but brought along some whole sweet potatoes to pass around. It’s so important for our kids to see and get familiar with the ingredients in their food.

✨Recipe:
Makes 12
2 cups flour (any kind)
1 tablespoon baking powder
¼ teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
Pinch each of nutmeg, cloves, and allspice
1 cup mashed sweet potato
½ cup coconut sugar, plus extra to sprinkle on top
2 tablespoon molasses
1 egg (or flax egg)
1 cup milk (I used coconut)
3 tablespoons oil (I used avocado)
2 tablespoon maple syrup
1 teaspoon vanilla extract
1. Preheat oven to 350 degrees. Grease a standard sized muffin tin or line with paper cupcake liners.
2. In a large bowl, mix flour, baking powder, salt, and spices together with a whisk.
3. In another large bowl, mix the remaining ingredients until well combined.
4. Dumb dry ingredients into the wet ingredients and stir until just combined and no flour remains. Do not overmix.
5. Scoop muffin batter into pan filling each cup ¾ of the way full. Sprinkle a little sugar over each muffin, if desired. Bake until lightly browned on the top and cooked through, about 25 minutes.
6. Allow to cook fully before enjoying. Store muffins in the refrigerator for 3 to 4 days.

We made our almond milk a couple days ago and I was looking for a recipe to use the leftover pulp. Came across this recipe (link in comments) and they are sooooo awesome. 😍 I used #Einkorn flour and 3 bananas. Seriously SO good.

Fiz tanto muffin em novembro, que tenho que continuar a partilhar as receitas para não me esquecer... 😅 O meu ig é a minha memória! 🤪 Esta receita foi para despida, em grande das framboesas, ultimas framboesas do ano. Quem não tiver framboesas pode fazer só com chocolate, dobrar a quantidade de chocolate. - A ideia é nunca ficar a perder!😉

Muffins de laranja com pedaços de chocolate e framboesas
Ingredientes
4 ovos
1/2 chávena de sumo de laranja
2 c. sopa de vinagre de maçã cru
1/8 c. chá de sal marinho
1/4 chávena de amêndoas
1/4 chávena de nozes
1/4 chávena de óleo de coco, líquido
1/2 chávena de açúcar de coco
1/4 chávena farinha de coco, peneirada
1/2 chávena farinha de araruta
1/2 chávena de coco ralado
1/2 c. chá de bicabornato de sódio
Raspa de uma laranja
100g de chocolate 70%, em pedaços
2 (~200g) chávenas de framboesas
Preparação
Numa tigela, misturar as farinhas, o coco ralado, a canela e o bicarbonato de sódio.
Num liquidificador, ou com ajuda de uma varinha mágica (mixer), bater as amêndoas, as nozes, os ovos, o açúcar de coco, sumo de laranja, raspa de laranja, o vinagre e o sal. Juntar aos sólidos e misturar até obter uma massa homogénea. Dívidir a massa por 12 formas para muffins. Levar ao forno pre-aquecido a 180ºC, deixar cozer entre 35 a 45 minutos. Antes de retirar do forno fazer o teste do palito. Deixar arrefecer por 10 a 15 minutos e desenformar.😋
