PB Energy Balls ✨
A fan fave, I must say. I’ve been tweaking this recipe for a while now and it’s always changing to include whatever I have on hand or I’m craving at the moment. This batch included:
4 cups rolled oats (I usually pulse 1 cup into a flour)
1 ripe banana, mashed
3 tbsp chia seeds
1/3 cup shredded coconut
1 tsp cinnamon
1/3 cup diced dates or raisins
1/4 cup cacao nibs or dark chocolate chips
1/4 cup melted coconut oil
2 tbsp maple syrup
1/2 cup manuka honey
1 1/2 cups natural crunchy PB
Mix all ingredients together until well combined. Roll into balls (I’ll usually wet my hands a few times to keep the mixture from sticking to my hands).
Makes ~32 energy balls.
FYI ❗️even though these are healthy, they are very energy (kcal) dense- hence the name “energy balls”. My recommendation would be limit them to 2 per day... if you can 😉

up and at em this morning. headed out for a day of shopping with my mom and grandma but first☝🏻these [ carrot cake overnight oats ].
i mixed @coachsoats, cinnamon, vanilla extract, @pranaon vanilla protein powder, @siggisdairy plain 0% yogurt and @califiafarms unsweetened vanilla almond milk and grated carrots. they were so creamy and dreamayyy. the ONLY thing i would do different is roast the carrots ahead of time with ghee and cinnamon, and thennn shred them. that would be a game changer. the best part of these was topping it with a @nocow carrot cake bar. this bar is AMAZING. definitely top 5 bars i have ever had. and it’s got 22 grams of protein and only 1 gram of sugar. happy sunYAY babes!

M A T C H A 🍵 so as I’ve mentioned here before, I’ve got some stomach lining issues that flare up whenever I’m consuming anything acidic/irritating (coffee, tomatoes, spicy foods). my stomach’s been so sensitive lately, so even my beloved cold brew is too much for me on the daily. sooooo...In comes matcha for my daily caffeine fix 🤤 as much as I love and miss coffee, matcha has been a very welcome addition to my daily diet because 👋🏻 hello amazing healing properties (+ it’s delicious) 🙌🏻 while I’ll occasionally have some cold brew (which is easier on the stomach than regular coffee), matcha’s taken its place on the daily for now & I’m a-okay with that 💁🏼‍♀️

my super quick matcha:
-12 oz. hot water (not boiling or it’ll burn the matcha!)
-1 tsp matcha (I love @domatcha )
-3/4 cup or so almond milk 🙌🏻 (I love using a maple-syrup sweetened @malkorganics when I’m feeling fancy, but mostly just unsweetened vanilla almond milk) -sometimes I’ll add coconut butter to make it extra creamy, or add a little bit of honey if I really want it sweet BUT very rarely since I don’t think it needs it 😌

1 kinesisk hvitløk
1 ss raspet ingefær

Salt & pepper
Stek alt i litt olje og la det småkoke i 10 min . Smak til og mos den gjerne bittelitt med stavmixer ,men ikke den bli helt most.!!
Avkjøl og ha over på glass med tett lokk.

Happy Sunday! I had avocado toast this morning & it was sooo good. I didn’t take a photo of it but let’s just reminisce back to this beautiful toast with sautéed tomatoes. Only the best way to make avo toast! Topped with toasted hemp seeds. I’ve been re watching the vampire diaries because I’m on winter break and WHY NOT? It’s only my favorite show of all time. Sunday breakfast: Blueberry almond smoothie topped with coconut flakes, ground chia seeds, @traderjoes gf coconut quinoa granola, sliced almonds and cinnamon 🥥🥄
All good days start with a massive breakfast salad. This is my favorite way to ensure I get my greens in. Today I've got a kale salad tossed in avocado oil, lemon juice, salt and pepper, shredded radish, beet hummus, blood orange, avocado and a poached egg. Happy Sunday everyone 💃🏼 #breakfastsalad

I know a lot of y'all think #sugar is the devil but I thought I would make this post anyway. Here's my top picks for healthier sugar options and some fun facts on them. They are all dissolvable, with the exception of date sugar, so will work in your tea/ coffee as well as in cooking or foods.

Where to find them:
• Pure maple syrup - grocery store
• Date sugar (Gr8 for baking) - health food shop, online, or make it yourself (it's easy!)
• Honey - buy locally
• Stevia - grocery store
• Brown rice syrup - health food shop or online • Coconut sugar - health food shop, online, some grocery stores (Tesco, Sainsbury's, Costco I have seen it in)

My two cents on sugar is: sugar is carbs. If your body doesn't do well with carbs don't eat high sugar foods and make your life easier. If your body does do well with high carb/ sugars then don't worry. If you have sensitive teeth/ tooth problems try and avoid sugary foods and use a straw when drinking drinks with sugars. If you are an avid smoothie maker, use a straw and be mindful of the sugar content if you are dieting. If you love cake but don't want to bake with loads of sugar then find alternatives like date sugar. And if you like alcohol then be mindful of your sugar consumption in drinks 🍹Hope this was helpful!

Put an egg on anything and it counts as breakfast, right?
I was really really feeling these zucchini sticks when I woke up this morning, so I decided a breakfast salad.
Deets are pretty simple: just some fried up zucchini, bed of field greens, a fried egg. To fill me up, I also had a bowl of coconut yogurt and my homemade granola (find the granola recipe a few posts down) 😋😋
