Made this creamy coconut & cauli soup last night as we have guests that have travelled from the blistering cold U.K. With colds.. feeding them up on veggies to get them well and to keep us from catching the 🇬🇧 bug. If anyone is needing a lovely soup recipe let me know in the comments below and I'll pop it up.

Skyr yogurt with my breakfast after the gym this morning. I could eat this yogurt all day everydayy it’s so yummy and filling (especially mixed with fruit and granola) + has 14g of protein per pot🏋🏻‍♀️

Dinner is ‘free from’ pasta shells with creamy chikin, mushroom, asparagus, courgette and baby corn.
To make my creamy sauce I combine rice milk, nutritional yeast, a squirt of vegan mayo and then I add herbs as spices like paprika and some garlic.

Life is SO DAMN GOOD 😍 it’s taken a long time and a lot of hard work, but I feel like I’m in such a wonderful, joyful place in life. Not to say I don’t have my struggles (hell I have a few) but dang I’m loving the journey. .

Step one for me was learning to love myself for who I am and where I’m at in the present moment - screw comparisons, expectations, or being someone you’re not. It’s not always pretty, definitely never perfect, but digging deep to accept myself created a space for growth and so much more love around me. .

How do you show yourself love? Some of my favorite ways: cooking and baking (duh), watching the sunset, sleeping in, and slowing down when my body asks for it. .

DA GOODS: mixed green salad with @chosenfoods roasted carrots, avocado, tomato, cucumber, blueberries, and roasted chicken (coat with olive oil, salt, pepper, garlic powder, and chili powder then bake at 450 for 20 minutes or until cooked through)
Chocolate and coconut truffles! The recipe is a few posts back, just roll them in coconut flour or grated chocolate 😘🍫 recently, I've been thinking about lifestyle and ethics more. Especially why people, myself included, make changes; What motivates us? Or inspires us? My love for nature influenced my studies, and as I became more curious and invested I wanted to learn more 🌱 A lot of the time I wasn't sure what I could do or where to start. But I persisted because it was important to me. Yeah I made a lot of mistakes too, but isn't that what this whole experience is about? 🌎🌍🌏

Used my leftover roasted butternut squash and added it to my @traderjoes pancake mix and VOILÀ. Whole grain butternut squash pancakes topped with almond butter, coconut flakes, and my homemade probiotic coconut yogurt again! (I'm obsessed)

🥕🍅🌶🍋 I’ve been asked for the recipe of my dinner the other day…there is no recipe, however I will tell you my step for step instruction. For the cauliflower I just mixed 1 Tbsp cumin with 1 Tbsp cayenne pepper, salt, and pepper and 2 Tbsp olive oil together, toss the cauliflower and bake for approx. 20 minutes at 180C or until golden. At the same time add sweet potatoes into the oven and bake for a little longer.. maybe 30min. Cut 1 block of firm tofu into cubes and roast it in a non-stick pan (no oil needed) once it starts getting color, add a good splash of soy sauce and toss it, it only needs another 30 seconds or so. Use the same pan for the asparagus, just ad a drizzle of olive oil and salt. For the salad I used pea sprouts (soooo nutritious) and carrots, cherry tomatoes, kalamata olives and a lemon/dijon/pumpkin seed oil dressing. I had leftover hummus and black beans in the fridge. Assemble everything in a nice bowl. E voila.. takes less than 30 minutes!! 💗#eatlikeyougiveafuck

Tonight's dinner .... #almondbatteredfish (for recipe see previous post) and #courgettechips (cut a courgette into 'chip' shapes, spread on a parchment liner, sprinkle over sea salt - in this case I used @cornishsea_salt garlic salt - chuck on some grated Parmesan and put in oven for about half an hour on 180). This fish tastes EXACTLY the same as chip shop battered cod, but is thousand times healthier and doesn't leave you with that 🤰🏻feeling you always get from it. My boyf doesn't do healthy, getting him to eat what I eat is on par with getting a child to eat their vegetables, but he actually much prefers this version of fish batter than conventional. The courgette chips are super yummy, but you can have whatever you fancy with yours. A healthy diet doesn't have to be endless bowls of lettuce, small portions or boring and unimaginative food. I've yet to find a meal that I can't reproduce in #lowcarb version.
