Finally back in the kitchen and it feels so good 🙌🏼 Dinner tonight is one of my fav quick week night dinners: Sweet Potato Nachos 🍠🥑 Topped with shredded turmeric garlic chicken, black beans, mozzarella cheese, mixed greens, tomatoes, avocado, & a dollop of plain Greek yogurt 💁🏼 Easy & delicious #happymonday #eatprettyeatwell
What’s going on everybody. So I haven’t been the healthiest when it comes to eating and working out but I am jumping right back on it this week and started off strong with an amazing arm workout and this bad boy right here. It is a @megafitmeals Taco Bowl and holy cow it is amazing!!! Just enough spice and it tastes just like authentic Mexican food. Can’t wait to try my next meal and keep dropping these pounds off of me. Have a good rest of your week and get after it!

Aprovechando un poquito mi día libre, modifiqué una vieja receta para hacerla igual de Rica pero mucho más saludable

Se las dejo acá, por cierto son muffins de zanahoria y jengibre
.
Preparación:
• Tostar 50 gr de nueces y picarlas
• Tamizar 1 taza de harina integral y 1/4 de taza de harina de almendras, 1/2 cucharadita de polvo para hornear, 1/2 cucharadita de canela y una pizca de sal
• Rallar finita 1 zanahoria
• Mezclar la zanahoria rallada con 1 huevo entero y 1 clara, jugó de 1/2 limón, 1/4 de taza de leche de almendras ( @greenfoodmakers ), chorrito de extracto de vainilla, 10 sobres de stevia, 1/4 de taza de aceite de coco( @aceitesnapus ), y 3 gr de jengibre rallado(es solo un pedacito)
• Incorporar la mezcla seca (harina, sal, canela, etc) y las nueces
• Llenar los moldes para muffins (alcanza para 12 más o menos)
• Hornar por 20 min a 185 grados
.
El de La foto fue el muffin bastardito😂salió chiquito porque lo hice con lo que me sobró, pero salen mucho mas grandes y tan ricos que me comí un pedacito antes de La foto porque en serio no aguanté🤷🏻‍♀️

☾ 160g minced pork ☾ 125g @slendier konjac noodle
☾ snow pea & carrot ☾ 5g roasted cashews
☾ fresh chilli, pepper, garlic, coriander, spring onion, low sodium soy sauce -
How I save calories:
☽ Noodles are made from konjac flour and have approximately 14 calories per serving
☽ Minced meat already has fat content so I cook them on a non-stick pan without extra oil
☽ Stir-fry the snow peas & carrot in the same pan afterwards and add extra water if necessary

Δ 258 (pork) + 15 (noodle) + 28 (cashews) + 60 (veg) + condiments = +-400 calories & hitting up at least 30g protein
