We'll call this the smorgasbord salad. Spinach (because it was at the end of its life), cherry tomatoes, beets, avocado, rotisserie chicken, and half an apple with @tessemaes honey poppyseed dressing! I honestly can't get enough of this dressing.
Nom Nom paleo posted an arugula pesto I want to try in the next few days and it reminded me of all the requests to post my pili nut spinach pesto. This is a rough estimate of how I make it. I’m lame and took forever to post it, my bad. [ 2 cups fresh spinach, 1 cup fresh basil, 1/2 cup @eatpilinuts 1/4 cup nutritional yeast, 1/2 cup Olive oil, 2-3 garlic cloves, juice of half a lemon and pepper and @redmondrealsalt ] Hella nutrient dense and great on lentil pasta, chicken breast, salads and alll the goods. #fuckingbelieveinyourself

Sunday night dinner, chuck roast! A delicious cheap cut of meat made even cheaper as I scored a sale. Recipe adapted from @thisoldgalcooks and made in the Instant Pot(IP):
Set IP to saute, when hot, add oil (I used bacon fat and avocado oil) and brown up some carrots and onions. Remove from the pot and set aside. Salt all sides of the roast and brown in pot (add more oil/fat if you need to). My roast browned up nice despite still being mostly frozen! 😁 I added some ACV, coconut aminos, fish sauce, garlic, and water to the pot with the roast, put the lid on, and cooked for about 90 min. Option to add back in the veggies for a few, but I was too hungry to wait another few minutes for the thing to depressurize and come back up to pressure...🙄 Hmm, thinking now that I should have done this traditionally in the oven because my boiler died in me this weekend. Would have heated up the whole house to have the oven on for that long! But then I wouldn't have eaten until Monday. 😆 I love my IP! 😍

Paleo Christmas cookie dough turned into grain-free, dairy- free cookies once the kids got to decorating. They did a great job and had a great time. My daughter’s friend said they tasted like Cheerios with sprinkles on them. It’s not the worst description and you’ve got to love kids’ honesty. Ever since childhood gingerbread has been a favorite holiday tradition of mine. Not that I don’t enjoy gingerbread any other time of year, but during the holidays there’s just something special about it!

Unfortunately, since setting out on the GAPS Diet, molasses is a no-no, and by extension, gingerbread. But I think I’ve figured out the perfect sub - and my secret ingredient is one of my all-time favorite things ever. 🙌🏼

Yep, these cut little Gingerbread Cutout Cookies are completely molasses-free. 🌟 Making them paleo and GAPS-friendly! You don’t have to cut them into stars, but it’s the last day of Hanukkah and it wouldn’t be complete without something star-shaped, right? 🕎

Yesterday we went to a local cafe and tried a GF cookie bar - which was SO extremely good that I could not stop thinking about it all day.🤦🏻‍♀️

And it inspired me! So today I tested a healthier version of it - minus the refined sugars, grains etc.. 🙈#
It didn’t turn out as good as I remember that one being, and I’m sure it won’t - nothing tastes better than real butter & sugar haha. 😬

But I’ll get the texture right on the next batch and share the recipe with those of you looking for a #grainfree #refinedaugarfree cookie bar that will keep you thinking about seconds and thirds for days to come! 🍫✨
