Yesterday, I had to make this delicious Norwegian salmon on gluten-free pasta. I had to, not just because it tasted amazing, but because only cooking will bring me to a state of calm and flow when I’m feeling particularly overwhelmed. I was transcribing part of an interview that deals with extreme atrocities (think Indonesia 1965). A very graphic description came up when I didn’t expect it, and it hit me hard. I might be overly sensitive, but I think it’s important to take a break when you need to and talk it through with someone you trust (big shout-out to my best friend and to my partner 💕) aaaand then sauté some spinach, fry some salmon and get back to work when your emotional batteries are recharged. Pretty, savory & packed with a 👊 of protein! Recipe ⬇️ 📷: @samanthajwharton
Ingredients:
- 500g #tolerantfoods lentil spaghetti
- 2 tablespoons of extra virgin olive oil
- 1 small onion, chopped
- 4 cloves garlic, minced
- 1 large bell pepper, diced
- 12-16 mini Roma tomatoes, cut in half
- 600 mls strained tomatoes
- 2 teaspoons fresh oregano
-1/2 cup of fresh basil, chopped
- Salt to taste
- Optional: 1-2 habanero peppers and some olives

Directions:
1. Cook the pasta according to the package.
2. Combine 1 tablespoon of the olive oil, onion, and garlic in a large saucepan over medium heat for 2 minutes.
3. Stir in Roma tomatoes, strained tomatoes, and the remaining olive oil.
4. Add in salt, pepper, oregano and 1/4 cup of the basil and peppers if using.
5. Simmer spaghetti sauce for 30 minutes, stirring occasionally. At the 20-minute mark, add in some more of the basil and stir it into the sauce.
6. Top with the remaining basil and olives if using.

Trying black bean pasta for the first time. It doesn't taste like black bean (although I wouldn't mind that I love beans!) but not quite like pasta either, has the same consistency of soybean pasta. I don't mind it, in fact it's delicious in its own way 😋. A great alternative to regular pasta. With all this snow I was definitely making a super hearty meal for dinner this evening. We love these yellow pea and sweet potato noodles (see my story for the brand). I also toss the noodles with lots of filling veggies like sweet potato, butternut squash, and kale + sautéed onion and garlic. I usually combine some coconut oil with lemon juice, rosemary essential oil, herbamare seasoning salt and a dash of truffle oil for a light sauce. Lots of parsley and nutritional yeast to round out the dish.
