Chili con carne is one of our favorite dishes! Have you tried to cook it with minced chicken? For those who want to save some calories, it's a great way to eat less calories but without compromising on taste!

Happy National Margarita Day!!! I won’t be celebrating this year but that’s ok!!!! And while I know many may be headed out for chips & salsa and margaritas this evening...I thought a Mexican inspired recipe for this this week would be appropriate! I am putting it on my menu for next week! We almost always have a bag of this family friendly Mexican dish prepped and in our freezer. It is SO good. #KidTestedKidApproved
And I love I can thaw and dump right into the crock pot for a busy evening! When I make this dish I make it twice...one to use and one to freeze. #NoExcuses #PlanForSuccess

Chicken Tortilla Soup
21DF: 1.5 cups = 1 red 1 green 1 blue (with sliced avocado)
Ingredients: 1 lb chicken breasts
2 20 oz. cans diced tomatoes with green chiles
1 15 oz can organic black beans, drained
1 onion, chopped
1 tbsp honey
1 tsp garlic, minced (½ tsp garlic powder)
1 tsp chili powder
½ tsp cumin
2 cups organic, low sodium chicken broth
Optional: Top with sliced avocado (1 blue container for 21DF)
Optional Baked Tortilla Strips (will need to add a yellow for the 21DF for these): 2 whole wheat tortilla shells
½ tsp chili powder
½ tsp garlic powder
½ tsp salt
½ tsp pepper

WIFEY WALKS
Throwing back to taking a walk on the wine side with @bridgesalamon . My wife has been at the centre of my fitness journey in so many ways. She supports me, she helps me, she cheers me up when I’m sore and grumpy, she nudges me out of bed in the early morning when I’m sore and grumpy or she convinces me to sleep in when she knows I need it. And, she’s always there to greet me with a smile after a workout even that one time my quick run turned into a five-hour hike (Yoh, I got lost). But not only has she supported me, she’s also joined me. In the last year, we’ve hiked, walked, swam and ran together and it’s been awesome. They say that couples that sweat together stay together. Well, I’m no scientist but I do know that the time spent klapping endorphins with Bridge has been the best. Here’s to many more adventures. Life is good.
