🎄2nd day of Christmas 🎄

Homemade sugar free cinnamon-caramel sauce and wild orange-chocolate sauce to go in the teacher gifts "just add ice cream" boxes.

Cinnamon-caramel sauce:
1 cup dates
1/2 cup coconut milk
1/2 cup rice malt syrup
1/2 tsp vanilla essence
Pinch of salt
Tooth pick swirl of cinnamon oil

Wild orange-chocolate sauce:
1 cup dates
1/2 cup coconut milk
1/2 cup rice malt syrup
3-5 tbs cocoa powder
1/2 tsp vanilla essence
Pinch of salt
3-5 drops of wild orange oil

Place all ingredients in food processor (I use thermomix) and blitz full power until good consistency. You can add more coconut milk if you want it more runny. ❤

Then for the box we put waffles, choc chips, sprinkles, marshmallows, m&m's and the sauce jars. Love our teachers. 😍

How can something taste so f*cking bomb but be unphotogenic as shit 😂 #veganstiryfry with only 4 main ingredients! Chopped red onion, red capsicum, zucchini and rice vermicelli. I added in organic soy, a dash of maple syrup, chilli flakes, minced garlic, ginger and salt/pepper. Slow Cooker Chicken and Quinoa with Spring Vegetables
Ingredients:
1½ cups dry quinoa
1 lb. raw chicken breast, boneless, skinless, cut into 1-inch cubes
7 cups low-sodium organic chicken broth, divided use
4 cloves garlic, finely chopped
1 tsp. dried basil (or chives or parsley)
Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)
6 tsp. prepared pesto sauce
3 cups fresh or frozen peas
1 Tbsp. fresh lemon juice
2 tsp. olive oil
2 cups shredded (or grated) carrots
1 bunch asparagus, cut into bite-sized pieces (about 2 cups)
½ cup grated Parmesan cheese

Preparation:
1. Place quinoa, chicken, 4 cups broth, garlic, and basil in a 3-quart slow cooker. Season with salt and pepper if desired. Mix well and cover; cook on low for 3 to 3½ hours, or until chicken is not pink and quinoa is tender. The mixture will be very thick and sticky.
2. Remove lid. Add remaining 3 cups broth, 1 cup at a time, until mixture resembles the consistency of risotto. You may not need to add all of the broth.
3. Add pesto sauce, peas, and lemon juice; mix well and cover. Set aside.
4. Heat oil in medium nonstick skillet over medium-high heat.
5. Add carrots; cook, stirring frequently, for 2 to 3 minutes, or until carrots are tender-crisp.
6. Add asparagus; cook, stirring frequently, for 2 to 3 minutes, or until asparagus is tender-crisp.
7. Fold carrot mixture into quinoa mixture; mix well.
8. Top each serving with 1 Tbsp. cheese.

Winterse coquille salade met groene asperges en sterfruit, afgemaakt met truffelsaus.

Simpel voorgerecht🎄

Incl. lactosevrij alternatief voor de saus😇

Ingrediënten 4 personen.
8 verse coquilles
200 gr groene asperges
10 kastagne champignons
5 el kwark
1/2 truffel of truffelolie
1/2 tl mosterd
100 gr rucolasla
1 sterfruit
Zout en peper

Hoe maak je het?
Leg op de borden een handje vol rucolasla. Meng de kwark, mosterd, de gerapte truffel, zout en peper door elkaar tot een glad sausje. Als deze te dik is, dan kun je er 1 el water bijvoegen. Snij de sterfruit in dunne plakken.
Snij de champignons in plakjes. Bak de champignons in een koekenpan. Schuif de champignons aan de zijkant in de pan. Bak nu de asperges 5 minuten. Bak nu in een andere koekenpan de coquilles gaar. Afhankelijk van de dikte is dit ongeveer 1 a 2 min per zijde.
Leg de champignons in het midden op de sla. Leg hier schuin aan de zijkanten de asperges bij. Op de champignons leg je de coquilles. Op de rand van het bord, serveer je de truffelsaus (wil je het perfect maken, spuit deze er dan op met een spuitzak).
Leg nu 3 plakken sterfruit op het bord. Eetsmakelijk👏

Oatmeal with strawberries, bleuberries and mango🍓🍓

Ingrediënten
30 gr havermout
100 ml sojamelk
5 aardbeien
1/2 mango
10 bosbessen
Kokosrasp
⚠⚠Indien glutenallergie of lactoseallergie, zie alternatief hieronder⚠⚠ Hoe maak je het?
Breng de havermout samen met de sojamelk aan de kook.
Laat deze nog 1 minuut door koken en doe het mengsel in een kommetje.
Snij de aardbeien doormidden en de mango in plakjes.
Leg de aardbeien, bosbessen en de mango in de kom.
Strooi hierover iets kokos overheen.
Eetsmakelijk👏
