A typical weeknight dinner for me, super quick and easy. I like having chicken sausage on hand for a fast protein option, then I just throw in whatever veggies I have in the fridge. Tonight it happens to be crispy roasted broccoli and chicken sausage.
Healthy eating doesn't have to be complicated and it's not just for people that have oodles of time to spend in the kitchen. Sure I enjoy taking my time making a meal when I have the time, but when I don't I let good enough be good enough for me #dinnerinspo

Mike and I have sky rocketed from our almost mid thirties straight into retirement. Our hobbies include completing puzzles, going to bed at reasonable hours, and eating these caramelized onion scones alongside a cozy bowl of soup whilst wearing the same thing we slept in. It’s a good life.

Real talk: in a lot of ways I'm living the life I've always dreamed of. I've got a full client load as a therapist, I lead weekly a mindfulness class, two weekly yoga classes, I get to TA for my mentor, I recently got the opportunity to be an adjunct college professor this semester (WHAT!? 😳) I'm writing a dissertation. But at the same time I'm absolutely drowning. Like barely holding it together this semester. I have this theory that we grow into the roles we're given and the last month has really stretched me to the brink. When I'm exhausted and know I can't stop, I try to find time to rest. Whether it's finding an empty room to take a 20 minute savasana or just dropping everything to bake some brownies. Brownies are IMPORTANT. I made @bonappetitmag butternut and kale phyllo pie over a month ago before life got crazy. It was almost as good as the abnormally warm weather that we took advantage of by eating it outside on our patio!
we are home from milwaukee & i'm pretty much just counting down the minutes until tomorrow, when i plan to make these bakery style chocolate chip cookies from @handletheheat again! ⠀

they are chewy, thick, loaded with chocolate, & SO dang good, omg. i know, because i ate an entire batch when i shot them for tessa a few weeks back. 🙈😬but really is there any other way to eat cookies than an entire batch at a time AM I RITE?! recipe on tessa's site!!!⠀

FIRECRACKER CHICKEN MEATBALLS & INSTANT POT RICE WITH LEMON ROASTED ASPARAGUS. This sauce sounds weird, but I’m telling you it is an amazing combo of spicy and sweet. Huge fan
- Preheat oven to 475.
- In a large bowl, combine 1 lb ground chicken, 1 egg, 1 cup panko (I used whole wheat), 3-4 cloves minced garlic, 1/4 tsp red pepper flakes, 1/2 tsp parsley, and 1 tsp paprika. Combine and form into meatballs. Cook for about 15 minutes, depending on size (I made 8 but mine are big), or until they reach 160 (will be cooking for another 2 minutes later).
- I also roasted the asparagus in the oven for 8-10 minutes with a little salt-free lemon pepper seasoning and some lemon juice on top.
- While the meatballs are cooking, add 1 cup white basmati rice and 1 1/4 cups water to the instant pot. Cook on high pressure for 5 minutes, then warm for 10 minutes, then release.
- In a pot, combine 1/2 cup Frank’s red hot, 3/4 cup brown sugar, 4 tbsp apple cider vinegar, 1/4 tsp red pepper flakes, and a little salt. Bring to a boil, then simmer for 8-10 minutes and remove from heat. It will get a little thicker as it cools.
- When the meatballs are done, cover them in some of the sauce (save a little on the side) and then roast for 2 more minutes.
- Combine with the rice and asparagus, and top with fresh minced parsley :)

So often I'm asked what diet I follow or how I eat, and I'm always at a loss for what to say because I don't fall into a specific label. But lately I've started saying that I try and live by this principle, 'eat vibrant to feel vibrant'. Obviously eating healthy isn't going to cure everything, but one thing that everyone does agree on, is we should be eating more fruits and veggies. And while I'm sure someone has already said 'eat vibrant to feel vibrant' it's starting to become my new slogan of sorts because it just has a nice ring to it. So I hope your week is off to a 'vibrant' start, and I have loads of produce packed recipes that will be heading your way over the next few months. But for now, try heading over to the blog and searching for whatever fruit of veggie you like to find a recipe. Or head straight to my Pineapple Orange Banana Green Smoothie, sub in mandarin oranges for the orange called for, and enjoy the deliciousness!

Although, if I’m being honest here, I’m sooo ready for some yummy spring eats. Slowly bring out the BBQ and basically grill everything till mid-late Fall 😂👋🏼 Us Canadians have to take advantage of the snowless weather as much as we can. 🤭 .
