Chicken breast, zucchini & mushrooms ❤

Tried some low carb yesterday, because I'm eating so many carbs with fruits. I don't take things too serious, I don't count macros or anything... just wanted to try out :)
Playing with spices always helps!

✨ CURRY || Avoiding both onion and garlic when you adore a good curry can be somewhat impossible. However, last week my neighbours, who are Burmese, cooked me 3 different types of curry with absolutely no onions or garlic, despite those 2 ingredients being the base for all Burmese dishes, and they were delicious. I enjoyed one so much that we had it 2 nights in a row at home. I heated olive oil on a low heat, added Ginger, Coriander, Turmeric, a small amount of Chillie Flakes and some Garam Masala. Once heated, I add in the chicken and let it marinate in the oil mixture for at least 10 minutes at low heat. Once the chicken is cooked, I add in a splash of blended tomatoes, a splash of coconut milk and then layer on lots of spinach. The rice I made was cooked with both Turmeric and Garam Masala. Once cooked I mixed the rice through the curry and boom! SO I opt for a skinny Cappuccino with sugar free gingerbread with sprinkles of nutmeg and chocolate on top! Take a spoon and eat the top like a dessert 👌🏽😍🥜 it’s about 100kcal instead of 300kcal plus! && the Gingerbread makes it taste Christmassy 🎄✨
