Today I got back to the other side. Strength training has kept all my training in the gym and cycling only to when I teach but gearing up to add more cardio and absolutely loved @scandela_fitness booty kicking class today! Environmental Optimization | Week 8: Growing Your Own Food | Post 3: #supple_scientist_suggestion

This was a fun little project that I really enjoyed doing! I learned a lot and I hope you did to!

In total this took me about 2 hours to put together. It was expensive but that's because I bought high quality materials. If you are on a budget you can easily find cheaper materials and still create a great vertical farm. If you want a lazier solution rather than making your own vertical farm, fear not I have another option for you!

Two of my friends @asiangirlsmiles and @chase_ando have started an awesome company @avasmartgarden and have created the BYTE, a portable indoor smart garden for your home!

Yogurt Chicken Curry Bowl. Healthier than the usual. But definitely still tastes amazing just like the usual. Watch and scroll for the whole recipe 👨🏼‍🍳🤗 Ingredients
Yogurt Base:

1/4 c Non Fat Greek Yogurt
2 T Almond Butter
1 T honey
Drizzle of Sesame Oil


Eggs (2 lg)
1 tomato
1/4 c Peas and Carrots
Handful of Baby Bok Choy
Grilled Chicken Breast
1 c Brown Rice

Procedure: - For the Grilled Chicken, I honestly just used a left over store bought grilled chicken that I happened to have when this was taped. But really you can use whichever style you would prefer. Honestly, due to the richness of the base, my advise is for you to just use a basic grilled chicken that’s seasoned with salt and pepper and call it a day, and set it aside until needed 🤗.
- Start cooking up your brown rice per your desire. I honestly just cook it based on my Brand’s instructions with a rice cooker (why complicate it right?) 😂 Tip: Cold left over brown rice sprinkled with a little bit of cold water works soooo much better for any types of fried rice.
- As for the whole recipe, start by heating up a little bit of oil to your pan (non stick please to prevent rice from sticking in the bottom when we add it).
- Start by scrambling the eggs just until it’s about to be cooked. Then add tomatoes and your frozen peas and carrots.
- Mix just until it’s about to be cooked (i’m not a fan of mushed up veggies so I make sure that my veggies are not wilting all over the place by cooking them just until it’s about to be cooked fully).
- Add your chicken, brown rice, and then your bok choy. Mix to combine just until the bok choy is cooked all the way through (remember, the chicken and brown rice are already cooked so there’s no need to cook them even more).
- Pour in our yogurt curry base per your desire, season with salt and pepper
- Serve and Indulge

Finished my #Day38 workout! Cardio flow isn’t one of my favorites...but I got it done. No complaints here. *
Lately Iv been taking recipes and creating healthier versions of them. Who can guess the secret ingredient in these brownies! 😝

Bueno que se puede decir del 2017! Un año con muchísimos avances desde lo laboral como a nivel físico!!
