Forever hating on the terrible winter lighting 🙄 but this #meatlessmonday toast was too tasty to not share! And paired with @livelovepop lime fresco popcorn, it was a freaking match made in heaven😇 for the toast I just mashed 1/2 an avocado up with 3/4c rinsed and drained chickpeas, then I mixed in some chopped tomatoes & mini bell peppers, and then seasoned it with lime juice, garlic salt, and pepper! Placed it on some toasty low carb bread and then sprinkled a little feta on top! Easy peazy and delicious!

Snack: @flapjacked protein pancakes made with Flapjacked buttermilk pancake mix, banana extract and plain Greek yogurt topped with peanut butter mixed with plain Greek yogurt and Walden Farms pancake syrup. Hunter and I are officially obsessed with these organic, grass-fed beef burger patties we've been buying from the store! I always love having grass-fed beef about once a week or so for an awesome B vitamin and Iron boost! Plus it's just so good. 😋 Especially on a bed of spinach and topped with onions, mustard, and @tessemaes ketchup! Pair it with some rutabaga fries and roasted green beans and Brussels sprouts and we've got ourselves a 👌🏻👌🏻👌🏻 meal. 🤤


#TIUBootycall was LG Legs + Abs and 1 round of the @toneitup daily moves! Was so excited for some new moves today!

▪️M2: got inspired by all the nog smoothies I've been seeing lately so decided to create my own 😍 👉🏻1 scoop @toneitupnutrition vanilla protein, banana, oats, @malkorganics pecan nog (omg this stuff 😍 Sooo good and the only dairy-free holiday nog I could find that didn't have any refined sugar! 🙌🏻), plus lots of cinnamon. It was delicious and #TIUHusband approved!

It’s crazy how quickly things can change. 2 months ago I was lost on my own fitness journey, carrying around an extra 25 pounds and just plain miserable with how I felt.

It took finally getting over my gymphobia and trying Keto to break the mental funk and get my ass back on track.
.
I now feel confident at the gym, love the progress I’m seeing with my muscles and I’ve lost more than the 25lbs I set out to lose.
.
Am I saying you need to join the gym and try Keto? Nope. Absolutely not...just because it worked for me doesn’t mean it’s the right thing for you. What I am saying is that if you’re in a funk or not seeing the progress you want to see, you need to stop and look at what you’re doing.
.
Write down your goals and see if what you’re doing will actually get there are. Chances are your actions DO NOT currently line up with your goals and it’s that one thing you don’t want to do because it scares you that will get you there.
.
Fuck the fear. Take a deep breath, tell yourself you got this, find someone to help guide you over the hurdle and take control!
.
It’s not easy, but anything worth working for never is. As cliche as it might sound “if it was easy, everyone would do it.” — Just remember, you’re not everyone...you are YOU and you deserve to shine!

Making dreams happen while not wearing pants? Am I dreaming? Nope! And you could too. I never thought I was capable of being a coach. I wasn’t anywhere close to my fitness goals. I had zero knowledge of what it meant to meal plan or prep. I basically had zero cooking skills. I was living paycheck to paycheck working part time at a fast food place. I was surrounded by negative energy. And my Endo pain management was non existent without pain medicine. I knew there had to be a better way to live. I knew I was meant for more than what I even could imagine but I didn’t know what platform to go about using to have my prayers answered. I said no a good 20 times before I said screw it 30 days- if I don’t like it or it doesn’t work I get my money back. I took a leap of faith🙌🏼 and dang I’m so glad I did. I’m now full time work from home. I’m surrounded by positivity and motivation and support. I have my Endo pain managed (98% of the time without medication)! I am on the road to financial freedom. And I am helping others chase their dreams and change their lives while working on my own and changing mine. I had myself soooooo convinced it was a scam and I knew I’d take my money back 😂😂 but look at me now😊🤘🏼 stop telling yourself that can’t be you. Stop thinking and TAKE ACTION. The only risk in this business is not trying. THATS IT! If you try you receive more results in all angles of your life you couldn’t even begin to imagine. It’s truly mind blowing. Trying to get over a cold so rest day + @wholefoods chicken noodle soup it is 🍵While I was there I stocked up on some cross-country road trip snacks for tomorrow when we drive 630 miles to Cleveland ❤️ It'll be another lazy day for sure, but hopefully that means I'll be feeling great by Wednesday 🤞🏽 .

You can call me the Slow Cooker Queen! Ha! Pollo a la Criolla aka Cuban Criolle Chicken for dinner tonight and it was fabulous! 🇨🇺

Recipe from Skinnytaste.com. Such a great resource for clean recipes!
.
Ingredients:
4 skinless chicken breasts with bone
1 small onion, diced
1 garlic clove, crushed
1 bell pepper, chopped or sliced
4 plum tomatoes
2 tbsp pitted spanish olives
8 oz can tomato sauce
1/4 tsp oregano
1/4 tsp cumin
Salt to taste
1-2 bay leaf
1/4 cup chopped cilantro
Optional: Baby Yukon potatoes cut in half
.
Directions:
*We brown the seasoned chicken first in the Ninja slow cooker.
*Place onion, garlic, pepper, potatoes and tomatoes in the crock pot. Season with salt, cumin and oregano. Mix well so everything is seasoned.
*Add tomato sauce, olives along with 1 tbsp of the brine, 1/2 cup water, 2 bay leavea and cilantro.
*Mix well and set crock pot to HIGH 4 hours or LOW for 6 hours. When done, taste for salt and seasoning and adjust spices as needed.
*Serve over brown rice.
