I have been adding pumpkins to lots of my meals lately: stir fries, curries, also creamy pumpkin soup.

Pumpkins are very nutrient dense and have lots of health benefits: - High in potassium which can also help lower blood presdure. - High in antioxidants especially beta carotene. - Great source of fibre, vitamin C, and vitamin A, which also supports heart health. - Helps to control diabetes. - High fibre content which helps you to feel fuller for longer.

Cutting up and peeling whole pumpkins can be a lot of work. I tend to cut up the whole pumpkin snd then freeze it in sections. You can then just grab and cook 🥗👌🏾😊

Beetroots pulled straight out of the earth roasted simply with rosemary, red onion and olive oil. Slow roasted Roma tomatoes and a smokey hummus, scattered with toasted pumpkin seeds. When vegetables are this fresh, they don't need a heavy hand. #plantmagic

Whether you call it a bowl or a warm salad this combo of smoky chickpeas, brown rice, lemony spinach, homemade sauerkraut and hummus is an easy and yummy meal. How about a simple store cupboard lunch? Puy Lentils, ready prepared in a pouch, tipped into a bowl and stirred through with chopped ready cooked beetroot, lots of chopped fresh parsley, toasted pumpkin seeds and a fiery dressing of olive oil, apple cider vinegar and fresh grated ginger... I steamed a few broccoli florets and added them in the side and forgot to add the avocado I had chopped • healthy eating can be quick and speedy too 💚

IT’S THE SMALL THINGS I’ve been making a huge effort to use less plastic this year. From the packaging on the food I buy to the takeaway coffee cups switching to reusable wherever I can. I had an extremely productive day today and it feels absolutely amazing! Finishing it off with this little creation of buckwheat and broccoli risotto with lemon and aubergine! Super delish and super easy too. Literally I toasted the eggplant, blitzed the broccoli into rice and then added to a pan with stock and lemon until it became a risotto like consistency ☺️☺️
