Took the bike for a ride this evening on the Katy trail and the sites did not disappoint! These next few weeks I hope for even more color change 🍂🍁. The real treat though was that I prepped my dinner before I left and came home to a steaming pot of chili!

They say opposites attract. My flatbread has homemade pesto. His has marinara. Mine has pulled pork, caramelized onions, apple, and arugula. His has pulled pork, pepperoni, caramelized onions, and arugula. Both are on a delicious grain free crust. That’s love for you; you find the common ground. ❤️
One of the things I love about the weather warming up is how much my body craves raw food.
There are so many creative people out there doing amazing things with raw ingredients to create the most highly nutritional 'kind dishes'. Food that's kind on our body, whilst remaining kind to animals and the planet. This all boils down to much kinder and gentler repercussions for our children, who, in the future, get to suffer and inherit any mistakes we make with our 'me focused' consumption choices of today.
There are many clever people creating raw, healthier alternative options for all the dishes we once loved but now must, in looking forward and choosing to live protectively for the future of animals, people and planet, reconsider. I am not one of those clever in the kitchen people, but I am reading about and learning new vegan techniques every day.
In the meantime, there is a perfectly nutritional, healthy, raw, convenient, go-to fast food - in salad.
It's my favourite thing about spring and summer. 🌿
