I like to call this the one person roast.
It's obviously not a full roast dinner but I sufficient enough for one person to sustaine their hunter.

We have a large chicken, roasted with a garlic and parsley better under the skin with lemon steaming it from the cavity.
Served with garlic and rosemary roasted and the deep fried potatoes and broccoli..... just steamed and fried in butter as the healthy option.

This is one Serious Street Taco !... Chicharrón y Cueritos con salsa roja picante. Translate... HOG HEAVEN ! Crunchy fried meaty pork belly skin and soft flavorful braised pig skin w/ spicy red salsa. It’s a pork lover’s taco on steroids and the soft/crunchy texture combo amazing. One of my favorites from El Toro Bravo. It’s always a toss up between this, cabeza and lengua... They’re all so good ! and HUGE !

Made this for dinner!

Teriyaki Salmon en Papilotte Rice Bowl
Serves 4

⭐️1tbsp olive oil
⭐️1 thinly sliced red capsicum ⭐️2 cups of pre-shelled edamame ⭐️4 x 100g salmon fillets skin on
⭐️1/2 tsp salt
⭐️1/4 cup low salt teriyaki sauce
⭐️ 8 sliced medium sized button mushrooms ⭐️2 sliced green onions
⭐️cooked brown rice

1. Preheat oven to 180°C fan-forced
2. Remove the skin from salmon fillets and place in middle of 30cm by 30cm baking paper. Divide the teriyaki sauce between the four fillets, and spread over the top of the salmon.
3. Fold paper over to enclose filling. Fold in edge to seal. Place on a large baking tray.
4. (Optional) place salmon skin on baking tray and sprinkle with salt.
5. Bake for 12 minutes or until salmon is just cooked through.
6. Boil edamame for 5 minutes and drain and run under cool water.
7. In a non-stick fry pan, heat olive oil on medium high heat and sautée mushrooms and capsicum.
8. Serve - 2/3 cup of rice, 1/2 cup edamame 1/4 portion of sautéed mushrooms and capsicum, and 1 fillet of salmon, crispy skin and garnished with some sliced green onions.
