De la mañana a la noche suceden muchas cosas sin darte cuenta porque no estás atento. Lo habitual es hacer múltiples tareas a la vez. Escribir un artículo, escuchar las noticias, leer los emails, reclamar una factura, hacer la lista de la compra, etc, etc. La mente sobreestimulada, como un ordenador, colapsa.

C H I A + V E G O M E L E T T E 🍳
A quick and easy low carb lunch idea full of healthy fats + fibre.
You will need 💁‍♀️
-2 Organic Eggs
-1/2 Tbs Chia Seeds
-1 cup Carrot grated
-2 cups Baby Spinach chopped
-1/2 tsp Coconut Oil
*Heat Coconut Oil over a medium heat. Sauté Spinach + Carrot until it wilts slightly. Whisk Egg + Chia Seeds together and pour over veg. You will see the Omelette firm up after a few minutes this is when you want to flip it (if you suck at flipping you can pop it under a grill!) it will only need another minute once flipped.
I served mine with Micro Sprouts, Sauerkraut, Avocado (35g) + Chilli Pink Himalayan Salt.
Calories: 338 C- 19 F- 19.8 P- 20
Thankyou for all your support on my last post, I’m really grateful for all the time I’ve spent eating a purely Plantbased diet (about 5yrs on and off) it totally changed the way I think about health from everything to the products I use in my home and on my skin, drugs, alcohol, where our food comes from and it definitely sparked my interest in learning about nutrition.
I really do believe food is medicine and I’ll never stop working on being the healthiest version of myself I can be 🤸‍♀️✨
