❄️ One of the few advantages of winter is all of the lovely (cheap) root veg around. This dish can be made meat free pretty easily if that’s your thing, and works as a side or a main.

👁 Squash is a good source of the mighty Vitamin A, essential for healthy skin and eyesight and especially important for growing kiddos (worldwide, vitamin A deficiency is the leading cause of preventable child blindness). The type of vitamin A found in veg, is actually a phytonutrient - a type of plant chemical - called beta-carotene, but our bodies are pretty smart at converting this into the vitamin once we’ve eaten. As a general rule of thumb, any orange veg is going to contain beta-carotene!

💁🏻‍♀️Also, also, this took me forever to twig but you can save yourself about a million hours by not bothering to peel butternut squash! If you roast it, the skin will just soften in the oven. Recipe in link.

Hi everyone, happy Friday!!! I hope you are all having a fabulous day! We love pumpkin and squash of all kinds and we eat it a lot! They're so creamy, filling, sweet and delicious. They're also full of nutrients and are almost half the calories of sweet potatoes!

Tonight I made black lentil & butternut squash patties tucked into pitta bread with sautéed onions, tahini sauce and fresh mint. Served with a side salad (romaine, marinated red peppers, purple onion and zesty vinaigrette) and roasted parsnips seasoned with Baharat spice. So delicious...and filling!!

I’m on such a #Brinner kick this week. And also on a roasted broccoli 🥦 kick nearing burnt perfection. Anyone else like that taste? If you haven’t had a baked egg inside a roasted #ButternutSquash hole, you’re not living your life right.
And if you don’t like 🥦 or know someone who doesn’t, try roasting it at 425F for 20 minutes after just a light drizzle of EVOO, salt, pepper and garlic powder. #GameChanger.

The other one was eggs and mini maple sausage and a pecan pancake. Weird cravings after dark. I do love brunch, but Brinner has its place. And No, not 🤰🏼, Just 🤱 still....

Butternut Squash Mac’n Cheese

Delicious butternut squash home grown in Wisconsin by my dad and my Grandma. My dad brought it out to me when he was visiting last month. 💜💜💜💜💜
• 1 8oz Box of Pasta
• 1 Butternut Squash
• 3/4 C Hot/Boiling Water • 3/4 C Oat or Canned Coconut Mylk
• 1 veggie bouillon
• 1 Tbsp Soy sauce • Paprika (to taste)
• Salt (to taste)
• 3 Tbsp nutritional yeast (optional)

Prepare squash, in oven or stove top depending on how it was bought (diced or whole). When Squash is almost done, start to boil water for pasta. Once water is boiling add pasta. Now combine squash and all other ingredients into a mixer. I heated up the water in an electric teakettle, this is necessary for the bouillon to dissolve. Once all ingredients are mixed, wait till pasta is done. Drain pasta and pour your delicious sauce over pasta!! Note you it is super saucy!! You can use more than 8oz and comfortably use the same amount of ingredients in recipe. 💜💜💜💜💜
