Broccolette makes the most amazing vegetable side dish I’ve ever tasted. To make: toss broccolette in olive oil place in a single layer on a cookie sheet sprinkle with garlic powder, salt and pepper. Bake at 350° for 15 minutes. This meal went farther than the original plan. The extra thought and effort came through in the flavor. I'm so happy with the result that I'm going to type it all out.
Chicken thighs seasoned with marjoram, salt, and pepper. Cooked in sage olive oil and butter with garlic. Under the chicken is a purée of caramelized onions, horseradish, artichoke, and fried sage. The sauce is sundried tomato tapenade, honey, lime juice, and salt. The veggies are Italian squash, broccolettes, peas, and rainbow carrots seasoned with coriander, balsamic vinegar, pepper, salt, butter, a little oregano, and a little brown sugar. The star ended up being the golden potatoes baked with mozzarella, pancetta, green onions, heavy cream, butter, cream cheese, jack cheese, nutmeg, marjoram, and good old salt and pepper. Also, fried sage garnish. :

@Regranned from @plantbasic_foodie - I grew up thinking of veggies as a side dish and in a supporting role to the protein. But no more! Veggies finally take center stage on nearly every dish I make and I never scrimp on satiety.

Because veggies are so full of water and fiber, they are fantastic ways to keep you feeling full, but can leave you feeling unsatisfied if you don't pair them with nutrients that your brain understands as satisfying. The easiest way to convince your brain that your meal was satiating is by adding healthy fat.

Here, the leading lady is the broccolette that I've steamed in water, miso paste, and salt. While beautiful, delicious, and nutritious, on her own, the broccolette wouldn't have delivered the feeling of satiety that I crave from dinner. So I paired it with a rich mushroom pesto (sliced baby portobellos sautéed until quite brown, sautéed garlic and rosemary, pine nuts, salt, skads of basil, healthy dose of really good olive oil) and curry-fried beet medallions. In combination, this dish is so savory you'll feel like you just had a big, steak and potatoes meal--but without the cruelty and risk of heart disease!
