(Salty & Sweet Fig Toast)
Gotten some figs with the intention to make something from Ottolenghi’s new book but life got in the way... and I just stumbled upon this recipe on Bon Appétit hehehe 🙊
I used cream cheese + Greek yoghurt and sprinkled some pink salt for the salty component. Any soft cheese will do!
Veggie Wrap on Steroids!

You’re going to love the explosion of flavors you get with this wrap! It’s so quick and simple, you’ll be resorting to this from now on when you're short on time but don’t want to be short on flavor!
Serves 2

1 piece Whole Wheat Lavish Bread (Trader Joes)
Olive Hummus (Trader Joes)
Vegan Pesto (Trader Joes)
½ cup your choice of dark leaf lettuce, chopped
2 inches Fresh Cucumber, sliced
¼ cup Sweet onion, sliced thinly
½ Red pepper, seeded, thinly sliced
1 small Avocado, diced
¼ cup cherry tomatoes, cut in half
Crushed red pepper flakes to taste
Salt and pepper to taste

Spread hummus on your bread, then layer with vegan pesto. (Our spreader in our spatula set works well for this!) Continue layering ingredients in order listed. Roll up and slice in half! Now, take the larger piece! .

My #tiucheckin and M3 for the day. I have to be honest but this meal plan is a lot of food! I don’t think I’ll be able to finish all 5 meals today. I did complete the DMs today and even walked to the gym! Figured I should get all my outdoor walks in while I can before it gets too cold here in WI. My food was good today! I’ve drank a lot of water, stuck to my meal plan and am feeling like I had a successful day 1!

Sooo I told myself I’d try and start posting something for #motivationmonday I had to choose this little quote as a shout-out to the class that I taught at @zoogymkenner this evening. So I got called at the last minute to substitute for a traditional Pilates class. I was unsure how they would feel about it but they stepped out of their norm (their comfort zone) and gave my POP Pilates class a shot! 🤗 I am so proud of each and everyone of them and thankful that they were so welcoming and accepting of me and POP Pilates!! 😊😊

I was reading my book the other day and it said to think of a person in your life who has been your mentor or role model. —
I started thinking of the “obvious” answers….Oprah? Mother Teresa? Martin Luther King?

No, none of them. The image that kept coming to mind was my dad.

Not because of any certain heroic act, but just because he’s always there for me. —
He’s worked 2-3 jobs at times to make sure we were cared for. He went above and beyond to make our childhood fun even on the crappy days. I still remember giggling in the car playing “I’m thinking of an….annnnnnimal.”

When I find myself in the biggest messes, he was there to sort them out. He has talked me down from several bad decisions. He has helped me figure out my wording and next moves when things get out of control. He has taught me how to control my emotions. He has taught me the value of hard work. —
He has taught me I can do and have and BE anything. He has taught me how to always trust that everything will work out, even when it really doesn’t seem like it. He has taught me so many things I cannot even fit them all in this space. —
I never realized all the things he did [and still does] when I was younger. I don’t think I fully even realize now. But day by day, I am uncovering more of a respect and understanding for the way he’s raised us.
He’s a pretty great guy.
