Tonight's dinner: do you know how fast and easy it is to bake cod? 10 min in 450 degree oven drizzled with olive oil, salt and pepper; while its cooking, sauté whatever you have (chopped onion, garlic, celery, carrot) and add a can of drained and rinsed cannellini beans, season with Italian seasonings- basil, oregano etc. Add vegetable stock or water to desired consistency. Serve with a bit of a salad drizzled with olive oil and lemon and use other half lemon to season with cod. Divine! Whole food cooking. What's not to like?

Taco night....never the same taco twice- this one used green onions in the Pico de gallo with cherry tomato, cilantro, lime. Guacamole- my usual, avocado, chopped fresh garlic, squeeze of fresh lime juice-NOTHING MORE. Beans- I used canned black and canned pinto since that's what I had on hand. Worked out beautifully with the small tortillas which I grilled in a cast iron skillet with canola oil.

Here's my morning smoothie set up at my office. Willpower is overrated. It's planning and repetition that create a habit!👌👗💄
1 cup unsweetened kefir
1 scoop whey protein powder
1/2 cup blueberries
1/4 banana
1 tablespoon almond butter
2 teaspoon ground flax seeds
Place all ingredients in an old fashioned metal milkshake can ($3 from Amazon) and blend with hand held blender. (Comes apart so easy to clean at office.). Easy, delicious, nutritious!

It's Bean Day #30!👌👙💄😇not to mention Presidents Day which gave me a little extra time to make the 30/30 day of bean commitment extra special so I cooked a pot of black beans (no cans!) and turned it into Black Bean Cakes ala Deborah Madison's Vegetarian Cooking for Everyone which was simply black beans with cumin, cheese, onion, cilantro, lime. Served these burgery delights with sautéed, riced cauliflower (plenty of onion and olive oil with a dash of salt). Then for greens I sautéed some fresh spinach in olive with chopped garlic. Doesn't get better than this! Proves that healthy food can look good, taste good and be good for you!

Black bean burger with sweet potato fries after movie The Party - loved the film and my Bean Day #27. Note: it can come as a shock how much food we are served and the amount we actually need. I ate the burger with cheese and half the fries (and a glass of wine!) and left behind the bread and half the fries.

Chickpea burger for Bean-Day #26 which I threw together in a few minutes and served with the Trader Joe's Super Spinach Salad with edamame, pumpkin seeds and a carrot ginger miso dressing.
Recipe for Chickpea burger-
Canned, drained chickpeas
Onion, 1/2 cup or so chopped
Garlic, 4 cloves chopped
Chile powder to taste
Chickpea flour, 2 tablespoons (I actually substituted some dried falafel mix I had in hand since I didn't have chickpea flour)
Blend all ingredients in mini food processor or big one or blender. Firm into 2 or 3 patties. Place olive oil in hot cast iron skillet and when it's hot but not smoking, fry the patties, about 4 minutes on each side.

I ate about a half cup with white fish topped with sliced cucumbers and oranges with a bit of lime and a side of garlic sautéed spinach. Some of you have asked about how to avoid GI disturbances from beans, AKA GAS. Here's how: Keep portion small to start and eat beans regularly to see if you can build up a tolerance. Longer cooking time helps. You can also soak your beans and change the water a few times- I'm not the planning kind when it comes to beans so I never soak mine, but you can give it a try if you're inclined. Bean Day # 17, over the hump on my way to 30 days of beans with Taco Tuesday. Black beans on toasted corn tortilla with my very own guacamole (1 avocado, 2 cloves chopped garlic and juice of a half lime) and my Pico de Gallo (chopped tomato, onion, cilantro with the juice of the other half lime, salt to taste) Actually, I like this way of eating so much I may continue including beans daily. The roasted bell peppers are so simple (quarter and seed, toss with olive oil and salt and roast in 400 degree oven for 20-30 minutes, turning once) served with spinach and a drizzle of good balsamic vinegar. That Smart Eating one more time! 😉👍🏻‼️

Kale and Edamame Salad from my morning trip to Trader Joe's after a spin class-- perfect lunch for Bean Day # 14! This is easy! Keep in mind, it's better to eat a small amount of beans daily (1/2 cup is my max) than eat a larger quantity since our bodies can't break down those oligosaccharides in beans which can overwhelm your gut and cause GI upset. Most people can build up up a tolerance to the fiber in beans if they eat a small portion regularly. That's smart eating! 😘😉

Chinese take out for Bean Day #12 - from Wokshop at the Glen Center - Szechuan Chopped Tofu with jalapeños- with a side of power zone rice and garlic-sautéed broccoli. USDA puts tofu in legume and protein categories. It's the best quality protein for any bean!
