The key to making your own Buddha bowls... prep all the veggies/food you like separately and then throw it all together and it usually works out! Today’s lunch is Brussels sprouts, crispy tofu, baked sweet potato, black beans, avocado, & chickpea salad

Red cabbage, not just for your roast dinner. Although I do love a bit of braised red cabbage with my Christmas dinner. Trying to balance out my not so healthy choices at work today. Can’t win ‘em all #blamekinder

What meal prepped lunch looks like when it’s all packed snug and ready to be consumed at work 😋. Between breakfast, lunch, water, coffee and snacks I swear, you guys, lately I just feel like I’m lugging around an entire day’s worth of sustenance with me wherever I go 😂🙈. Buuuut I guess that’s what this fitness life is all about, huh 😅?!
My lunch bag typically includes 1️⃣ overnight oats in a jar for breakfast 2️⃣ coffee from home because work coffee sucks 😝 3️⃣ meal prepped lunch 4️⃣ celery and/or carrot sticks w/ hummus to munch on throughout the day 5️⃣ dried fruit or nuts for when I need a sugar kick 6️⃣ @swellbottle filled with almond milk for my coffee in case I DO give in and make a pot at work (which I always do cuz coffee 😅!)

One Pan Herb Crusted Salmon with Broccoli Steaks for dinner last night 😍 This recipe is actually online so if you want the link comment and I'll send it over - it was so delicious and I haven't had salmon for so long!! 🙌🏼❤️ My live has been crazy so I haven't checked in for quite a while but Whole30 is going well, I'm on #Whole30Day19 and feeling great! I do have a lot of NSVs going on and am very happy with my reduced bloat and increased energy. 🙌🏼 All my meals are meals for two because they are just for me and my hubby won't be eating with me (one for dinner, one for lunch the next day.) 🤗
Cold ❄️ weather has me craving all the roasted veggies! This bowl is chock full of them: cauliflower, sweet potatoes, kohlrabi, carrots, mixed in with lacinato kale, black beans and cheddar cheese — YUM! .
QUESTION: If you could eat only one veggie for the rest of your life, what would it be? Mine would be kale ❤️

chocolate peppermint bites👉🏼 1 c. cashews + 1 c. pitted dates + 2 scoops @furtherfood collagen peptides + 2 tbsp. @navitasorganics cacao powder + cinnamon + 1/2-1 tsp @simplyorganicfoods peppermint flavor + @malkorganics cashew milk + @enjoylifefoods dark chocolate chips. combine cashews, dates, cacao powder, cinnamon & collagen & give it a good blend in food processor. then add peppermint & cashew milk and blend some more. throw in some chocolate chips for good measure & put in fridge for 30 minutes or so. then roll into balls & top with a little cacao 👌🏻 keep in fridge or freezer. this made about 12 💃🏻

Avocado toast is one of my favourite breakfasts, lunches or brunches. I only mash the avocado lightly then mix it with finely chopped tomatoes, red onion and red chillis (or chilli flakes), a squeeze of lemon juice, plus plenty of salt and pepper. (The mixing process tends to break the avocado up a lot which is why I don’t mash much to start with.) I used to add feta too (but obviously don’t anymore) so am going to experiment with some vegan cheeses in future. Will probably try @violife_foods Parmesan cheese to begin with - will report back!
In this case I had this for lunch so to make it a bit more substantial I added a couple of @cauldronfoods falafels (my fav store bought falafels by far) and hummus on the side👌🏼🥑

It might not be the prettiest salad, but it sure is the tastiest 😋 Lately I’ve been reading @jshealth new book and have been trying to incorporate a lot of what she talks about into my approach to food! I’ve been particularly focusing on becoming more mindful of my eating habits by focusing on listening to my body before, during and after my meals. I’ve found this approach has helped be massively to gauge how my body respond to the foods I’m eating 🙏🏼🌿

Taking the time to step back and listen to your body is one of the most beneficial and relaxing things you can do 🌿
@cava imitation bowl coming atcha 🙌🏻😋!! For those who don’t know, @cava is this absolutely bomb (and totally healthy!) create-your-own Mediterranean salad place where you get to select different kinds of dips to put on your salad 🤤.
Ever since I discovered one near my work I have been OBSESSED 🤩 with their dips, and - lo and behold - apparently you can just BUY them at @wholefoods 🤯!! Needless to say, I stocked up ✌🏻!
Tonight’s bowl is mixed greens with @cava “crazy feta” and traditional hummmus (I also bought their tzatziki and eggplant and roasted red pepper dips 😛), radishes, mini heirloom tomatoes and avocado slices topped with @oceansprayinc dried cranberries and @woodstockfoods tamari roasted pumpkin seeds and drizzled with @briannas_salad poppyseed dressing 😍.
Now if anyone knows where to hunt down a bottle of their lemon herb tahini dressing, let me know... 🧐
Picking up all the goods at @traderjoes. I know, black beans aren’t paleo. I’m trying a new recipe that calls for gluten free pasta and decided to give black bean pasta a try 🤷🏼‍♀️🙌🏻
