This is my very own conical fermenter, it arrived last week from @stouttanks in Portland!
Its job is to ferment the top-up wort for each batch for a few days, until the krausen dies down a bit inside the barrels. Once the fermentation slows down, I can top the barrels up to their total volume without fear of beer foaming out the bung and making a wasteful, sticky mess!
This is a problem faced by any brewer who wants to ferment 100% in barrels, and I think allowing the top-up wort to ferment separately for a few days solves the problem in an efficient way.
I'm pretty excited to start brewing my own beers, I have a few more exciting things on the way that I can't wait to share with you guys!
