In combination with my increased cardio, I have changed my diet.

Chicken potstickers over Asian cabbage and citrus vinaigrette salad! 🥟
Asian Citrus Dressing:
🍊 mandarin oranges in their juice (use ~1/3 of the juice)
🔻Panda Express orange sauce
🔻rice wine vinegar, unseasoned
🔻soy sauce
🔻fresh grated ginger
🔻lime juice
🌶 red pepper flake
🔻sesame seed oil (thr fragrant dark stuff!)
🔻fresh cilantro
🔻salt & white pepper to taste

🔻Napa cabbage
🔻red cabbage
🔻red onion, thinly sliced
🔻 green onion, diced
🔻bell peppers (pick a color)
🔻chopped cilantro
🥕straw-sliced carrots

Basic instructions:
Ok, so I don’t really use recipes, hence the lack of measurements, but here’s some important stuff:

when preparing the dressing, use a large bowl in which you plan to mix the salad. Once you have mixed the dressing completely, the next step is to slice the onions and put them in the bowl where they can macerate in the dressing. This is important, because it takes some of that stinky pungent quality out, and brings out the sweetness & color. Same thing with green onions, which come next, and then carrots, because they don’t lose their firmness in the dressing. By now, the dressing should mostly be covered with veggies. Bell peppers go next, followed by all the cabbages & cilantro. While the stuff at the bottom is starting to get the flavor, start the pot stickers on a hot pan with a blend of canola and sesame oil. The canola oil will help prevent the oil from burning too much, as sesame oil has a low smoke point. Once your potstickers are browned, add a bit of water to the pan and put a lid on, moving the temperature to a lower setting, so your dumplings can steam. While steaming the dumplings, toss the salad ingredients together so they have a chance to integrate. Once the potstickers are cooked, remove the lid, allow the water to disappear, leaving behind only the oil, and allow them to crisp again on higher heat. Serve the dumplings hot over the fresh, crisp, salad, and save some dressing for the dumplings!

Sesame miso ginger dressing with a carrot noodle (caroodle?😅) mint salad
I'm on a mission to start making my own salad dressings this year! This miso dressing is oh so delicious and has many uses: It can be eaten on salad, poured over veggies, or used as a dipping sauce.
2 " fresh ginger (peel with a knife) * option 1: chop up and blend in a high power blender or NutriBullet * option 2: grate ginger into a bowl and whisk other ingredients together
2 tbsp lime juice
2 tbsp honey
1 tbsp sesame seeds
1 1/2 tbsp soy sauce (I use Bragg's Liquid Aminos, a natural soy sauce alternative low in sodium)
2 tbsp olive oil
3 tbsp toasted sesame oil
4 tbsp rice vinegar

Soba and kelp noodles dressed in an Asian inspired dressing on a bed of mixed leaves, bean sprouts, avocado, fresh tomato + cucumber, pickled ginger, a sprinkling of sesame seeds, arame and wasabi cashews. This comes served with a side of miso soup 🌼
