Enjoying all the colorful veggies in this salad bowl for dinner tonight. Excited to finish eating this while watching Black Mirror, (I have a love hate relationship with this show, because it freaks me out lol, but I mostly love it ☺️) and then relax before bed by lighting a new candle (I’m SO excited. Anyone else get excited to light a new candle?) and cozying up to a good book.

Salad deets: queen avocado front and center with purple sweet potatoes, sautéed mushrooms, shredded carrots, tomatoes, @hilaryeatswell world’s best veggie burger (all-time fave), and cilantro to top it all off! Adding herbs is definitely one of my favorite new things to add to my salad. It makes such a difference and completely transforms any salad!
Arroz Poblano-ish. Typical Mexican rice dish, made healthier by using whole grains with veggies, and omitting the heavy cream and cheese that it typically goes with.

I love poblano peppers, but cooking with them can be a chore: char them, “sweat” them, peel, seed, devine them... Here the poblanos and other ingredients are blended together RAW (minimal prep!), then cooked down into a sauce. Combine with leftover grains and you’ve got a 20 minute, no-fuss, plant based meal! You can also build a bowl with shredded (humanely raised) meat like chicken.

POBLANO SAUCE:
- 2 poblano peppers, roughly chopped (vines, seeds and stems removed)
- 1/2 large onion, roughly chopped
- 1 garlic clove
- 2 cups of broth (use water in a pinch)
- 1 tsp salt (adjust if using water)
- dried oregano and pepper, to taste
- 2-3 cups of leftover grains (I used a blend of brown rice and quinoa with diced veggies)
Place all ingredients in a blender, and blend on high speed until smooth and uniform. Transfer to a sauce pan, and bring to a boil. Reduce heat and simmer (if foamy, stir until it dissipates). Cook until sauce has thickened and reduced and is a deep green (15-20 minutes). Taste, season with salt and pepper, and a sprinkling of dried oregano (1-2 tsp) and spices of choice (next time I’ll add turmeric). Meanwhile, heat grains in a separate pan (feel free to add frozen veggies to make it healthier; my quinoa blend had them already). When warm, pour sauce in, and stir until well combined.
Serve in bowls, topped with hemp seeds, nut cheese (I love @kitehillfoods ricotta), fresh chopped cilantro, and avocado. #arrozpoblano
DRAGONFRUIT OATS

Today I’m taking a leaf out of @monsflavors latest post where she talks about how simplicity is good for your soul.... so true when we are all busy with our day to day life 🌻. It’s been great having a few days off Instagram not posting everyday but still checking in now and then 😊. So when Mon said that caramelised bananas was her favourite I had to give it a try 😍😋... and boy did it take my breakfast to the next level 👅👅!!! So for today’s breakfast I used 🌷1 frozen banana 🍌 🌷1/2 cup @ceresorganics whole grain oats
🌷2 Tbs @stiryourmilk oat powder
🌷1 Tbs @ceresorganics chia seeds
🌷water 🌷coconut oil, 1 banana, maple syrup for caramelised banana 🍌 🌷@sujonberries on top

Blend in @vitamix for 1 min till smooth

Add 2 tsp @mistydayplantpotions drangonfruit powder tonic 🌸

Top with caramelised banana slices 🍌, mixed berries, rose petals and @ceresorganics Amaranth puffs 🌷😍 Have a beautiful day!!! 🌷🌷🌷

sim gente eu uso de maquiagem de vez em nunca (mais pra tipo nunk msm) mas faz uns dois anos (ou mais pq na real nem lembro rs) que não compro absolutamente nada, então confesso que não sou a melhor fonte sobre marcas de beleza cruelty free - que não testem em animais ou tenha insumos de origem animal na fórmula 💅🏽💄👄💁🏽‍♀️💃🏽 .

testes em animais são feitos pq existe uma legislação (totalmente antiquada, falida e sem nexo) que estabelece que animais inocentes precisam ficar encarcerados recebendo químicos nocivos que os deformam e matam para que certos produtos de consumo HUMANO entrem em circulação. o que faz zero sentido, afinal, o que o código genético de uma ratazana tem a ver com o nosso? nem se testassem em seres humanos haveria garantia de que um produto é seguro para todos - pq somos todos DIFERENTES! nao é atoa que tem gente alérgica, intolerante, resistente...enfim, é uma crueldade que custa CARO, não é eficaz e só existe ainda pq segue uma bíblia controversa chamada método científico. sugiro MUITO que estudem os textos do Sergio Greif para entender mais a respeito do pq testes são desnecessários e conheçam sobre testes in vitro! remédio ainda é obrigatório mas pra makes tem varios caminhos alternativos BEM mais éticos, como a pele sintética por exemplo. entao pra que continuar financiando morte se vc tem ESCOLHAS?

Let’s talk carbs! So I get a lot of people asking me for advice on what to eat that’s low carb. When we talk about carbohydrates, many of us think of bread, pasta, cereal, rice, oatmeal, etc. Firstly, carbohydrates come in many forms and are not all equal in structure, therefore effects on blood sugar and weight differ.

There are simple carbohydrates and complex carbohydrates. Simple carbohydrates are monosaccharides and disaccharides - these are single sugars (monosaccharide) or consist of two sugar molecules (disaccharide). Polysaccharides (complex carbohydrates) consist of many chains of glucose (a sugar unit). When you eat complex carbs, your body takes a longer time to break down all the chains of glucose, whereas simple carbohydrates are quickly digested and used for energy. Both are beneficial depending on the circumstance, but the source is most important. Simple carbohydrates can come from fruits🍊, chocolate bars🍫, or white bread🥖. Complex carbohydrates can be found in sweet potatoes, oats, leafy greens, or whole grain bread.

I use the organic sprouted whole grain Ezekiel bread, which I get from my health food store. The nutritional profile and ingredient list are completely different from a typical loaf of white bread you’d find at the grocery store. Making small changes like switching to 100% whole grain organic bread can positively impact your blood sugar, weight, and cravings.

In addition, I top my toasts with foods high in healthy fats, protein, and fibre, such as hemp hearts, sauerkraut, nut butters🥜, hummus, and avocado🥑. These will provide vitamins, minerals, fibre, fats, and protein. As a result, your blood sugar would rise and fall gradually after the meal, so you stay satiated for longer and don’t have that mid-day crash. Balancing your blood sugar is so essential!

Fill bowls halfway with chia pudding, then top with coloured coconut yogurt and fruit, arranged to create a spiralling rainbow 🌈 Fill a small bowl with remaining coloured coconut yogurt. ENJOY! 😋
