Terrible lighting in this kitchen 😒 tonight I made some tasty Salmon & roasted squash #whole30day17
I have to admit I've been stretched a little thin lately. Trying to balance 50+ hour work weeks, clean eating, fitness, coaching, and being a responsible dog owner has been a little overwhelming. I find myself letting some aspects of my life slip through the cracks while I focus on others. Trying to figure out the balance has proved to be challenging, but I'm still determined to do it all 😜
Some more meal creations! First up I have some pan fried cod with butter beans and cauliflower fried turmeric rice with ghee (@traderjoeslist NEW OBSESSION and I used to be soooo scared of butter but this is freaking delicious!), side sweet bean loaf and crumbled protein cookies, and melted mozerella cheese. Next up I have my first ever cauliflower pizza using an egg and lots of cheese (and I used to not touch cheese either...) around 10 inches in diameter wide!
It was delicious! I also made a modified version of @angelasfitlife oatmeal bake for tomorrow's breakfast while cooking the pizza (to save time and oven heat lol) 🙌🏼
Bless vegan chocolate superfoods, peanut butter and sprinkles for kicking these PMS cravings to the curb tonight 👌🏼

I tried out a new recipe for lunch today— a tuna melt made clean!

🌀1 bag of tuna in water 🌀1 tablespoon of Greek yogurt 🌀2 teaspoons of mustard 🌀1 tablespoon of pickle relish (I made my own by chopping up a piece of an English cucumber and soaking it in vinegar) 🌀Himalayan sea salt & pepper to taste

Then, add some chopped up cherry tomatoes to a slice of sprouted grain bread, top it off with the tuna mixture and a little bit of shredded cheddar, and bake in the oven for 4-6 minutes at 400 degrees! So easy and yummy!

Easy Weeknight Veggie Gnocchi Recipe!
.
Ingredients:
1/2 medium – onion
2 1/2 cup, pieces or slices – mushrooms, white
3 clove – garlic
2 tablespoon – olive oil
28 ounce – diced tomatoes, canned
1 tablespoon – Italian Seasoning
1 teaspoon – salt
2 cup – spinach
16 ounce – Gnocchi
1/2 cup – Parmesan cheese, grated

Preparation:
1. Dice onion and slice mushrooms (if not pre-sliced). Mince garlic.
2. Heat a large skillet with high sides (or stockpot) over medium heat. Add olive oil and saute onions and mushrooms until the onions begin to go translucent (4-5 minutes). Add garlic and saute for another 30 seconds.
3. Pour in diced tomatoes (including the juice) and add Italian seasonings and salt. Add 2 cups of spinach and carefully stir.
4. Once spinach wilts, add uncooked gnocchi and stir together. Simmer for 3-4 minutes, until the gnocchi is cooked. Stir in Parmesan cheese and serve warm.

My first attempt at making oven “fried” chicken strips. Inspired by @fitmencook ‘s oven fried chicken recipe | Super easy to make: prep time of 10 mins, bake time of 22 mins. Served with red lettuce and side of sugar free bbq sauce. | For the chicken, cut organic boneless chicken breasts into strips. Put them into egg whites before tossing them in mixture of 2 tablespoons wheat germ, 2 tablespoon Baharat spice on one, and 1 tablespoon cumin and 1 tablespoon garlic powder on the other. Baked for 22 mins at 400F.
