My 🍝 SWEET POTATO PASTA 🍝 that, AND is definitely a popular one on my website! By CLICKING the link in my bio, it will take you right to other awesome recipes to enjoy!

🌀 Prep time: 10 mins
🌀 Cook time: 20 mins
🌀 Serves: 4
.
INGREDIENTS:
-2 large sweet potatoes, peeled
-1 cup dried figs (about 15 figs), roughly diced
-1 (4 ounce) package prosciutto (8 large slices), cut into 1 inch squares
-1 cup slivered almonds
-1 (4 ounce) container crumbled goat cheese (optional)(equals 1 cup)
-½ teaspoon sea salt
-½ tablespoon olive oil
-2 tablespoons water
.
INSTRUCTIONS:
1. Chop the pointed ends off your sweet potato and spiralize it. If you don't have a spiralizer you can use a julienne peeler to make noodles
2. Cut prosciutto into strips, roughly 1-inch long and ¼-inch wide
3. Slice dried figs into thin rounds, being sure to remove the hard stems
4. Place a large saute pan over medium heat with your olive oil
5. Add your sweet potato noodles and season with sea salt
6. Cook for about 5-7 minutes or until sweet potato noodles soften and are no longer raw. Be sure to stir frequently so that the noodles don't burn.
7. When done, transfer to a plate.
8. In the same skillet over medium heat, add sliced proscuitto and cook for about 3 minutes, flipping halfway through cooking or stirring often
9. Add sliced figs and slivered almonds and cook for another 3 minutes until your figs are soft and slightly browned. Stir often
10.Add ½ cup of your goat cheese and water, stir together to melt the cheese slightly and then add all of the sweet potato noodles
11. Stir until well combined and remove from the heat
12. Serve immediately and garnish with your remaining ½ cup goat cheese.

Besides my Buffalo Chicken recipe that I know you've heard me talk about a time or twenty 😂, my CHICKEN TOMATILLO 🍗 definitely come in a close second.
.
Of COURSE, besides the flavor that is out of this world, I love that it only takes a few ingredients, can be used in many different dishes, AND is literally ready in NO TIME ⏰ with the Instant Pot!
.

🌀 Prep time: 10 mins
🌀 Cook time: 15 mins
🌀 Serves: 4-6
.
INGREDIENTS:
-6 boneless chicken breasts
-2 red peppers, sliced
-1 red onion, sliced
-2 jalapeños, sliced
-8 ounces mushrooms, sliced
-1 tomato, sliced
-2 cloves of garlic, minced
-1 (12-ounce) jar of tomatillo salsa
-1 tablespoon lemon juice
-1 teaspoon salt
-1 teaspoon pepper
-1 teaspoon oregano
-1 teaspoon cumin
.
INSTRUCTIONS:
1. Place all of the chicken breasts in the bottom of the Instant Pot
2. In a mixing bowl, combine all of the remaining ingredients and mix well
3. Pour mixture over the top of the chicken
4. Cook in your Instant Pot on high pressure for 15 minutes
.

This may sound cliche', but my 🥓BACON BEEF BUTTERNUT SQUASH🥓 is always one that I end up thanking myself later for cooking! Below are the magic steps on HOW TO put it together!
.
🌀 Prep time: 15 min
🌀 Cook time: 50min
🌀 Serves 4
.
INGREDIENTS:
-1 butternut squash, cut in half
-1 pound ground beef
-6 slices of bacon
-3 small onions, sliced 1 reserved
-1 stalk celery, diced
-salt
-pepper
-1 teaspoon cinnamon (add more for taste if wanted)
-2 tablespoon balsamic vinegar
.
INSTRUCTIONS:
1. Preheat oven to 350 degrees Fahrenheit
2. Cut squash in half and scrape out the seeds
3. Place face down in a pyrex dish with ½ inch of hot water and cook for 30 minutes
4. While its in the oven, cook the bacon in a pan until crispy, set aside and leave the bacon fat in the pan
5. Add 2 of the sliced onions and celery to the pan and then add the beef
6. Season with salt and pepper to taste and your cinnamon
7. Continue stirring until the beef is finished, remove from heat and place in a bowl
8. Remove the squash from the oven, when you can handle it scrape out some of the guts, leaving ~1/4 inch of squash, add squash to bowl with meat
9. Crumble your bacon and add that to the bowl as well
10. Mix well and then stuff your squashes with the beef mixture and place back in the 350 degree oven for 20 minutes
11. While your squash are baking, add your reserved onion to your sauté pan and cook them over low heat with your balsamic to caramelize them
12. Remove squash from oven, top with caramelized onions
13. Enjoy

🌀 Prep time: 10 min
🌀 Cook time: 15 min
🌀 Serves 10
.
INGREDIENTS:
*Muffins*
-½ cup raw pecans
-1½ cups almond flour
-½ teaspoon ground cinnamon
-1½ teaspoons baking soda
-½ teaspoon salt
-1½ cups banana
-1 egg
-1 tablespoon raw honey
-3 tablespoons coconut oil, melted
-3 tablespoons coconut cream*
-⅓ cup chocolate chips
*Cinnamon Streusel*
-2 tablespoons almond flour
-⅛ teaspoon ground cinnamon
-1¼ teaspoons coconut oil, melted
.
INSTRUCTIONS:
*Muffins*
1. Chop pecans in a food processor until coarse meal
2. In a large bowl mix the chopped pecans, almond flour, ground cinnamon, baking soda and salt
3. Process the bananas, egg, honey, coconut oil and coconut cream in a food processor until creamy
4. Using a rubber spatula, gently mix the banana mixture with the dry ingredients to form a batter. Do not over mix.
5. Fold in chocolate chips
6. Spoon batter into prepared muffin cups, filling each to the top
7. Top each muffin with cinnamon streusel and bake at 350°F until a toothpick inserted into the center comes out clean, approximately 15 minutes
8. Set muffin pan on a wire rack to cool
*Cinnamon Streusel*
1. Mix all ingredients for the streusel together until crumbly

Kind of wish I hadn't experimented with the Ohnivec by keeping them in a tiny 12cm pot. If I knew they grew this well I would have put them in a 35cm pot and reaped the rewards 😦

You might have seen it before, BUT who's tried one one my FAVORITE recipes??? ✋

🍌 Paleo Banana Bread 🍌
.
🌀 Prep time: 10 minutes
🌀 Cook time: 60 minutes
🌀 Serves: 8 people
.
Ingredients:
🔹4 bananas
🔹4 eggs
🔹1/2 cup almond butter (or coconut, sunflower seed, macadamia nut, etc butter)
🔹4 tablespoons grass-fed butter, melted (can substitute coconut oil)
🔹1/2 cup coconut flour
🔹1 tablespoon cinnamon
🔹1 teaspoon baking soda
🔹1 teaspoon baking powder (gluten free or homemade)
🔹1 teaspoon vanilla
🔹pinch of sea salt
.
Instructions:
1⃣ Preheat your oven to 350 degrees fahrenheit
2⃣ Combine your bananas, eggs, and nut butter, and grass-fed butter in a blendtec, blender, food processor, or mixing bowl and mix well (if using a mixing bowl you need a good hand-mixer)
3⃣ Once all of your ingredients are blended, add in your coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt and mix well
4⃣ Pour your batter in a silicon pan and spread it evenly (you can use a loaf pan as well, just grease it well)
5⃣ Place in your preheated oven and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean
6⃣ Remove from oven and flip your bread out onto a cooling rack
7⃣ Slice and serve
.
Variations:
✔ Cranberry Orange - Only use 3 tablespoons of butter. Add zest of one whole orange diced, juice of one whole orange, and1 cup dried cranberries or fresh if you want
✔ Chocolate Blueberry - Add 1 cup of fresh blueberries and 1/2 cup of cocoa powder
✔ Pumpkin Pecan - Reduce the almond butter to 1/4 cup and add 1/2 cup of pumpkin puree and 1 cup of roughly chopped pecan pieces
.
Notes:
If you want to make these into muffins, use the same recipe and for mini muffins bake approximately 25 mins and normal size muffins 30-35 minutes.
