With winter still within sight, I crave comfort food. I love making creamy cauliflower mash (like mashed potatoes but lighter!) paired with a rotisserie chicken & roasted asparagus on our extra busy evenings. Here's the recipe, y'all!
- 3 lb. cauliflower, diced (though I usually buy 2 bags of riced cauliflower to cut time!)
- 1/4 cup @Bolthousefarm's Unsweetened Plant Protein Milk - it's allergy friendly (no soy, nuts or gluten!) & it makes your mash extra creamy!
- Thyme, coarse sea salt, cracked pepper & butter to taste
Pour cauliflower into a large pot & fill with water until the cauliflower is just covered. Boil for 10 minutes until cauliflower is tender. Once cooked, thoroughly drain the cauliflower & return to pot. Add @Bolthousefarm's Unsweetened Plant Protein Milk. Using your immersion blender, "mash" or blend the cauliflower, adding your seasonings as you work. Once the cauliflower mash is thick & creamy, serve in a lovely bowl with butter, fresh herbs & more cracked pepper. Enjoy!
P.S. There are many ways to add flavor to your cauliflower mash! Try adding bits of bacon, sautéed onion, or sautéed mushrooms depending on the theme of your evening.

Dragon Fruit Smoothie Bowl Recipe
-1/2 to 3/4 cup Bolthouse Farms Original Plant Protein Milk
-1 cup frozen dragon fruit cubes
-1 large banana
-½ cup fresh or frozen strawberries
-granola, coconut flakes, star fruit
Directions: Combine ½ cup milk, dragon fruit, banana and strawberries in a blender and blend until smooth. Add more milk and blend, as desired. Pour into a bowl and top with granola, coconut flakes and star fruit. Enjoy!

Hi guys, it’s Sonali from @thefoodiephysician here with one last recipe for you! Give your immune system a boost this flu season with my Roasted Cauliflower Turmeric Soup. It’s packed with vitamins, minerals, antioxidants and flavor! I make it with @bolthousefarms Unsweetened Plant Protein Milk. It’s so versatile- you can drink it or add it to sweet or savory dishes for a boost of protein and calcium! The recipe is below. I’ve had so much fun showing you all of my favorite ways to use @bolthousefarms Plant Protein Milk over the past few days. Thanks for being a part of it- hope to see y’all soon! ☺⠀

1 head of cauliflower, cut into florets ⠀
2 tablespoons olive oil, divided⠀
2 teaspoons turmeric, divided⠀
¼ teaspoon kosher salt ⠀
1 yellow onion, chopped⠀
2 cloves garlic, minced⠀
2 teaspoons minced ginger⠀
½ teaspoon ground cumin⠀
3 cups vegetable broth⠀
1 cup Bolthouse Farms Unsweetened Plant Protein Milk⠀
2 teaspoons lemon juice⠀
Cilantro for garnish ⠀

1.Toss cauliflower with 1 ½ tablespoons oil, 1 teaspoon turmeric and the salt on a sheet pan and roast in the oven at 425°F for 25 minutes until tender.⠀
2. Sautè ½ tablespoon oil, onion, garlic, ginger, cumin, and 1 teaspoon turmeric in a stockpot over medium heat until onions are softened. ⠀
3. Add the roasted cauliflower and vegetable broth, cover, and simmer 20 minutes. ⠀
4. Add the milk and lemon juice. Puree soup with an immersion blender. Garnish with chopped cilantro.⠀

among my children's’ less-than-lovely qualities: they treat breakfast time as if they are sitting in a diner with a thirty-page menu, and i am their chef, server, and dishwasher. one would like triple-berry pancakes with a side of bacon (extra crispy), and for the other only house-baked muffins and hand-churned cream will do, and all of these things must be on the table right. now. (seriously, they are SO SPECIFIC). how i’m solving the breakfast-specificity problem lately: by making big batches of overnight oats using @bolthousefarms plant protein milk - which is vegan (made with 100% pea protein!) and has 10g of plant protein per serving - and setting out a little oatmeal bar so they can add toppings to their picky little hearts’ content. #TheFutureOfMilk, #plantprotein, #peamilk, #nondairy, #vegan, #sponsored
