Aubergine, cheddar, dill, pumpkin seeds and onion rolls, coated in almond flour and fried in butter. Enjoyed with cabbage dressed with rice vinegar/chili, garlic, onion and olive oil dipped in spicy Christmasy apple/plum chutney. And left over curry with rice given new life as a biryani with Brussels sprouts, broccoli, onion, 🥕🌶 and lots of spices!
