THAT Rocky Road inspired by @bethfrombristol & @nigellalawson I couldn’t get my hands on any veggie marshmallows so used sultanas instead. It’s just that soft melt to biscuit crunch to sweet chew and everything in between that makes it so darn good. Definitely one to throw together this weekend people...😉
Cranberry and soy glazed cocktail sausages from ‘Nigella Christmas’ @nigellalawson . I made these as part of my #52cookerybooks project #52cookerybooks_week17 . Nigella explains in recipe ‘that a party isn’t a party without a sticky sausage or three.’ I’m not serving this canapé at a party, but I agree with Nigella that they are they are ‘lip smacking!’ The glaze is made from my homemade chilli jam, cranberry sauce, brown sugar, soy and juice of a lime and clementine. •

Christmas Rocky Road from ‘Nigella Christmas’ @nigellalawson made as part of my #52cookerybooks project #52cookerybooks_week17 . They taste so good. Mini marshmallows, Brazil nuts, glacé cherries (Ruldoph’s nose), milk and plain chocolate, amaretto biscuits, golden syrup and butter combine to make a perfect sweet Christmas treat!

It’s Monday and a change of book for my #52cookerybooks project #52cookerybooks_week17 . I have chosen another classic Christmas cookbook for this week ‘Nigella Christmas’ @nigellalawson (2008). I’ve just had a quick look through, I didn’t realise how many of the recipes I have made from it in the past. I can’t wait to get cooking from it again. This project has enabled me to enjoy and get to know my cookery books again and focus properly on new purchases too! Photographer in book is #Lisparsons

Roasted red peppers stuffed with fennel made from the vegetarian chapter of ‘Delia Smith’s Christmas’ book made part of my #52cookerybooks project #52cookerybooks_week16 . Each half of pepper was stuffed with a tinned tomato, blanched fennel and a sprinkling of crushed fennel and coriander seeds. The peppers were brushed in olive oil and baked for an hour. Delia suggested serving with lemon juice, but I didn’t find it needed it. I served the peppers with @marks_bread 7 seeded sourdough which was perfect for mopping up the pepper juices. •

I have made hibiscus chicken from ‘Hibiscus’ by @lopeariyo . It has been my ‘hibiscus’ week in more ways than I expected. I bought some at the beginning of the week to go with this recipe, next I saw a new delivery of hibiscus arrive @otomiuk my local Mexican shop. It was then served served last night as Karkade- a sweet hibiscus drink at the Sudanese Supper I was helping at!! @beththefreerangechef I know where to get it now!! I marinaded the chicken in some of the new additions to my spice cupboard, celery salt and garlic powder and brushed on a hibiscus sauce made with hibiscus petals, coconut water and coconut sugar. I served the chicken with the fried coconut rice as Lope suggested in her book. I absolutely loved the flavour combinations, so different than anything I have had before. Tiny cheese, onion and olive scones from ‘Delia Smith’s Christmas.’ I made these as part of my #52cookerybooks project #52cookerybooks_week16 . The scones were made by firstly pre-cooking the onions in butter until they were a caramel colour. These were then added to the scone mix with mustard powder, cayenne, Parmesan and cheddar cheese. The resulting scones were so light and had amazing flavour. I suppose I could have frozen some to keep, but I’m afraid to say they were all eaten!

It’s December 1st! This is cranberry and onion confit from ‘Delia Smith’s Christmas’ book made as part of my #52cookerybooks project #52cookerybooks_week16 . Thank you @editorkarenb for reminding me about this wonderful recipe. I now have a batch ready for Christmas in the freezer. The confit in the photograph is in a jug from the Bristol pottery founded 1652, no longer in existence. It was bought in a local charity shop. I need to find out more about this pottery. •

Savoury cheese palmiers with ham and anchovies made from the canapés and nibbles chapter of ‘Delia Smith’s Christmas’. These palmiers should carry a warning as they are very moreish! It’s Monday, so a change of cookery book for me. I have chosen a classic Christmas book this week ‘Delia Smith’s Christmas.’ I have chosen this book as part of my #52cookerybooks project #52cookerybooks_week16 . Each week I choose one of my cookery books to cook from and focus on. This book was produced in 1990. I remember that when the book first came out the ‘Delia effect’ started where shops sold out of ingredients such as fresh cranberries and pickled walnuts that were needed in her recipes! I am looking forward to revisiting this book and reminiscing about past Christmases. •

Posh Piccalilli! (Posh because it contains heritage carrots). I made it from ‘The Modern Preserver’ by @newtonandpott as part of my #52cookerybooks project #52cookerybooks_week15 . The piccalilli contains a mixture of six vegetables, including the heritage carrots encased in a mustardy sauce. I need to leave it to mature for one week, even better for four weeks @every.good.thing I will try to be patient!

Pomegranate vodka, from ‘The Modern Preserver’ by @newtonandpott. It takes three months for the pomegranate to macerate (soften by soaking in liquid) in a cool dark place- that’s too long for me to wait to sample it!!! Kylee Newton the author of book ‘The Modern Preserver’ suggests the pomegranate vodka can either be drunk neat or as a shot with prosecco, which one will I choose? A difficult choice! Pizza E Menesta- braised greens with polenta cake. My second dish cooked from ‘Two Greedy Italians’ by @cookcarluccio and @gennarocontaldo . I made it as part of my #52cookerybooks project
#52cookerybooks_week14 . I haven’t eaten polenta for a long time, I had forgotten how good it is! It was a perfect accompaniment to the braised greens, which were simply cooked in garlic, chilli and olive oil. I shall certainly be making this again! •

Frittata di Maccharoni- left over pasta omelette. Carluccio explained in the details of this recipe that because Italians love pasta so much they had to invent this dish so that they could eat pasta on the move! It is the Italian equivalent to Spanish tortilla. This frittata is traditionally eaten on Easter Monday picnics or other outings. I got up at 6am this morning to make this bowl of coconut rice from Hibiscus @lopeariyo ! I went back to work after 4 months on Monday, so I now have to re-schedule how I marry my love of cooking and eating with going to work! I cooked this dish as part of my #52cookerybooks project #52cookerybooks_week13. The rice was cooked in stock and coconut milk that was infused with thyme and bay. In Nigeria lope explains how fried coconut rice is saved for special occasions such as weddings and birthdays. I’ve had a taste whilst it was cooking and it has a delicious flavour, the spices I used were turmeric, ginger, coriander and garlic powder. •

This is the first dish I’ve made from my book Hibiscus @lopeariyo -Nigerian roasted veg. I have made it as part of my #52cookerybooks project #52cookerybooks_week13 . The roasted vegetable selection consisted of roasted okra, plantain, yam, red onion, tomato, red and green pepper thyme, salt and cayenne pepper roasted in coconut oil. It was very moreish!! Lope writes in her book how she connects this dish with her home.
